All kidding aside, and before I forget.. may your holiday season be marked with pleasant memories and the gathering of friends and family.

Thanks TownDawg! I went to the grocery store to buy the fixins for my part of the meal: maple glazed sweet potatoes and apples and my hordy derve of choice: Hot spinach and artichoke dip. YUM!

What are the rest of ya whippin up?

All traditional ordinary food. When I have a really big crowd, I add a few more creative items, but this year there will be only a small group of us.

Tofu Turkey with Stuffing

Turkey:

Ingredients:
5 pounds of firm tofu
1 pound of tofu for the drumsticks - optional

Directions:

Stuffing:

Ingredients:

2 tablespoons toasted sesame oil
1 large onion, chopped fine
1 and 1/3 cup celery, diced (about 4 stalks)
1 cup mushrooms, finely chopped
3 to 4 cloves garlic, minced
1/4 cup sage (may use 1/8)
2 teaspoons marjoram
2 teaspoons thyme
1 teaspoon winter or summer savory
salt and pepper to taste
1 teaspoon rosemary
2 teaspoons celery seed
1/4 cup soy sauce or tamari
3 cups Pepperidge Farm Herb Stuffing

Directions:

Basting mixture:

Ingredients:

1/2 cup toasted sesame oil
1/4 to 1/3 cup soy sauce or tamari
2 tablespoons miso
2 tablespoons orange juice
1 teaspoon mustard of choice

Directions:

Mash tofu or mix well with hands. Be sure that all of the lumps are
out. Line a 12 colander with wet cheesecloth over lapping the
sides. Add the mashed tofu to the cloth covered colander, press
down and cover with the overlapping sides. Place the whole thing in
a large bowl. Cover the cheesecloth with a plate that fits inside
the colander and place a 5 pound weight on the plate. Refrigerate
and let sit for 2 to 3 hours.

When time is up, start the stuffing. Saute' the onions,

celery and mushrooms in the 2 tablesoons sesame oil. When soft, add
the garlic and all the rest of the stuffing ingredients, except
stuffing, mixing well. Stir and cook for 5 minutes. Add herb
stuffing and mix well.

Remove tofu from fridge and take off weight, plate and top of
cheesecloth. Hollow out tofu to within 1 inch of the sides and
bottom, placing the tofu in a bowl. Place the stuffing inside the
shell and pack in firmly. Cover with the remaining tofu and pat
down firmly. Turn stuffed tofu onto a greased baking sheet, flat
side down. Gently press on sides of turkey to achieve a more oval
shape. If desired at this point, you may mold drumsticks out of one
pound of tofu, and place on each side of the turkey.

Mix up the basting mixture and baste tofu turkey with half of it.
Cover the turkey with foil, and bake at 400 degrees for about 1
hour.

Remove foil, baste with all the remaining mixture except a few
tablespoons and return to oven for 1 hour more, or until the turkey
is golden. Remove from oven and use rest of basting mix. Using at
least 2 large spatulars, move to a large plate. Serve with the
gravy of your choice, if you wish, and cranberry sauce.

HOI, people at the store were talking about deep frying their turkey, but this is a new idea to me. Does the turkey come out oily? What do you do with all that oil left over from deep frying a whole turkey. THat would be like two or three bottles of oil, wouldn't it?

Only on the outside. The skin holds all the natural juices in and I don't think you eat the skin.

Dunadan- I like taking firm tofu and slice it long ways and brown it in oil and then make little pizzas out of them in the oven. Killer!

I don't think I could do the tofu turkey though. I posted that as joke. 8)

Anyone else going to have a nontraditional Thanksgiving like me? My sons will be with the ex and they are prety much my family. I'll be spending my holiday in the woods with my dog, camping and backpacking. Sounds a little sad but I've done it before and it's lots of fun, not to mention peaceful.

We are actually having thanksgiving at our house this year.. which is a departure.. because normally it is at mom's.. (both of them.. hers and mine... )

This year, her mom has a romantic interest.. and going to eat with HIS family.. and we talked my mom into letting us host thanksgiving here for a change..

Cuisine?.. Ooo.. just the usual.. turkey, spiral cut ham.. dressing.. etc..etc..

There's a turkey farm down the road a bit...all the local teenagers get paid real well to process them next week. Those birds are walking around looking all happy and full, watching the cars drive by.

Ever had a fresh bird? The difference in taste and especially texture is amazing! Makes one wonder just what goes into a butterball!!!!

I'll be frying several Turkeys next week. They don't come out greasy if the oil ( peanut oil is best) is hot enough.

Heat the oil to 350, cooking rate is about 3 minutes/lb. Make sure the temperature stay at 350.

Most people inject a secret spice solution into the turkey before cooking.

Cajun Injectors work great for fried turkey. You can get a kit with sauce and the injector for about 5 Bucks.

I'm taking the whole week off! I'm hiking the Black Creek Wilderness Trail alone, then back for Thanksgiving at my house with my wife's family. We will be having smoked turkey with all the trimmings.

What are maple glazed yams? Sounds really good.

I have had the deep fried turkey on a number of occasions. Not oily at all. Very moist, very good.

Even better than barbecued turkey.

Will do chili36. I've hiked portions before but never the whole thing on one trip which is what I plan to do this time. I gave it a shot back in the summer and a tropical storm ran me out. Almost lost my truck due to high water before I could hike back out.

Leatherneck, you either open a can of yams, or you peel the fresh ones, cut them into chunks and boil them for maybe 10 min. Put the yams into a glass shallow dish with some chunks of butter, then drizzle maple syrup over them. Bake them at 350 degrees for 30 min. then add mini marshmallows sprinkled on top . Put in oven, bake for another few minutes until the marshmallows are a little toasted on top, then take out of oven and set on the table. I usually prepare it ahead of time, then heat, do the marshmallows at the same time that I'm baking the cornbread or rolls, so it goes on the table almost last.

gotta share my son with his dad and family this year, so..
I will go out to the vegetarian feast at temple then head to the rainbow river where some old high school freinds spend thanksgiving weekend camping/kayaking for the weekend
and canoe until saturday.

My favorite family traditional pie is cranberry-raisin-apple-orange. Unfortunately not many other people in my immediate circle like it too much so I usually don't make one.

Going to a gatering of friends for the traditional pig-out. Hope to spend at least one day hiking.....

I'll be driving to Aspen, CO to cover some pre-olympic ski competitions over the weekend. The problem with working in the news business is there's news happens on holidays, too. Dinner will be in a restaurant with a co-worker. Or if we hit bad weather, maybe it'll be jerky and gatorade at a gas station.

My whole family gets together at my moms, about 20 or so of us. Traditional turkey dinner, trivial pursuit, and lots of kids. The next day I'll spend with my grandkids, and the two days after that I hope to spend hiking in NH.

When I was a total bachlor, I carved the Thanksgiving frozen pizza or usually I was in the woods for 4 days.
Now we go to Cracker Barrel.
It's too much trouble to try to prepare a 19 course meal. Susan and I tried that 4 or 5 years ago and said "Screw This!!"
