What are you doing this saturday...I am going to hit the OT for a good day hike. You are welcome to join me and Khatru. Can't do an over nighter..have a dinner engagement in the eveining. Let me know...I am going to head out of my house at 7:30-8 am...will return home @ 4. Takes an hour or so to reach the TH.

There is no way I can wait for breakfast Wednesday, assuming it arrives tomorrow, it is going to get pan fried with three eggs, over easy, and some homemade biscuits (you learn how to make these when you marry someone who can't cook)about 6PM CDST.

I have been out of getta for about 6 months,,,,I have planned a trip to Covington (KY) a couple of times in the past couple of months but had to scrub the trip. It looks like we will conduct a field training class in Louisville toward the latter part of May. I am going to schedule it for We and Th so I can spend the weekend in CinCity.

yes sir, I did, I had to attend a meeting with the bean counters in regard to operational finances, buy my very capable Secretary opened the box and put the still very cool getta in the refrigerator for me. I might have to leave early to get this stuff in a fry pan,,,,no way I will wait for breakfast tomorrow.

Gotta Getcha Some Goetta
Of course, there’s more to Cincinnati cuisine than chili. There’s also goetta. This mushy compound would seem a natural outgrowth of Cincinnati’s German pork-packing heritage. But its ancestry is somewhat questionable. Goetta is a fried mixture of oatmeal and sausage that, while it may not look or sound so appetizing, tastes pretty good. Goetta is often compared to scrapple, a Pennsylvania Dutch mix of cornmeal and sausage with an even less appetizing name.
The Finke family of Covington claims to have invented goetta around the turn of the 20th century, according to DuSablon. The family owned a store that butchered meat for the old Covington Market at Sixth and Main streets and sold their oatmeal-sausage concoction as “Irish Mush.” The story goes that when they crossed the river to markets in Cincinnati, goetta pancakes took on more of a German aura and ultimately a German-sounding name. By other accounts, German farmers who immigrated here brought goetta recipes with them.

Despite the seemingly boffo consumer appeal, goetta never made it far beyond the Cincinnati area. Today, you can find goetta on the menu of many restaurants with Cincinnati roots, such as Perkins. And you can find it in the meat case of any area grocery, alongside the sausage and pork brains. Goetta is another Cincinnati favorite your cardiologist is unlikely to recommend. A 220-calorie serving has 120 calories from fat. But, on the bright side, that’s a lot better than plain sausage.

Today two of the city’s biggest goetta producers are Glier’s Meats in Covington and Hoffman Sausage in Cincinnati. Both report growing sales. Goetta season, if there is such a thing, seems to begin at back-to-school time in late August and continue through the fall. Goetta is an obvious hit as a breakfast food, served alongside bacon, eggs, fried apples or apple sauce, or with an egg on top. But it isn’t just for breakfast anymore. Some people make goetta, lettuce and tomato sandwiches, goetta turkey stuffing and goetta-and-cheese hors d’oeuvres.

Old-Fashioned Goetta
This recipe comes from Rita Heikenfeld, a Batavia food writer and cooking teacher, who passes it along from her mother-in-law, Clara.

2 to 3 lbs. pork shoulder, bone in
8 c. water
3 c. chopped onions
2 large bay leaves
1 to 2 ribs celery, chopped (with leaves)
1 tbls. salt
1 to 2 tsp. pepper
3 c. pinhead oats
Cut meat into several large pieces, leaving bone in one. Place meat in large, heavy-bottomed pot (11 quarts or larger) with water, onions, bay leaves, celery, salt and pepper. Bring to a boil and lower to simmer. Cook, uncovered and stirring occasionally, for two hours. Meat should fall from the bone. Strain meat and vegetables from liquid when cool enough to handle, chop finely. Set meat and vegetables aside. Pour liquid back into pot and add oatmeal. Bring to a boil and lower to a simmer. Cook uncovered, stirring often, for two hours. Mixture will be thick. Add chopped meat and vegetables. Simmer for another 1 to 2 hours. Line three to four loaf pans with aluminum foil; spray each with nonstick vegetable spray. Pour goetta into loaf pans and allow to cool for 30 minutes at room temperature. Place loaf pans in refrigerator overnight to cool. (Option: cover pans overnight to produce a creamier, softer goetta or leave uncovered to produce crust.) After goetta has set in the refrigerator, cover pan well and store up to two weeks there. It can also be frozen. To serve, slice goetta into half-inch pieces and fry in bacon fat, vegetable oil or pan sprayed with nonstick spray. Serve with bacon, eggs, fried apples or applesauce. Makes three to four goetta loaves.

Chili has been in negotiations with a huge hamburger company whom he cannot at this time name in regard to taking over complete facility maintenance.

It has been stressful to say the least. We have ajourned the session and will reconvene the latter part of this month. I am literally exhausted.

Buddha, if I were you I would jump on the opportunity. I think a stint there would put one in postition to join just about any Fortune 500 company he wanted.

There is a company called Exult that is a HR outsourcing company and they are now moving toward labor relations as well. IMHO, you have a golden offer.

Talked to Father Goose on the phone while in Gulf Shores and then promptly dropped my cell phone into 15 feet of water. Had to wait until I got back to Memphis to get another. Went to the Pony and imbibed, but not having as much as a description of FG, I could have been sitting next to him and not known it.

BB, we are not at an impasse, we both just needed some time to analyze the data. I have a proposal on the table to provide maintenance services (parking lot service, HVAC, landscape in Phase I) at over 20,000 locations. The key issue at this point is how to differentiate billing between corporate and franchise locations. They want one source of service and I want one source of payment.

Opie, we already have the contract for installation of graphics to the Parking Lots. (Thank You, Drive Thru, logo's, etc.). Avery Dennison is the manufacturer and they ship direct to either the site or to the Install Provider. I am working with them on logistics.
