It's cheaper and I can control what goes into it, but the downside is it's more time consuming. For instance with the tofu you bought, I made something that sounds similar to that using soft tofu, blueberries,bananas or other fruits and whipping it in a blender with sorghum.” 4:50:29 PM 11/20/02 “Here's an official recipe for homemade Tofu Yogurt (ice cream substitute) from the book Vegan Nutrition Pure and Simple. One 12 ounce cake of soft tofu Sliced bananas, 1 frozen, 1 fresh 1 teaspoon of sorghum or other sweetener 1/4 cup of fruit juice or water This does not taste sour like most dairy yogurts. Blend at medium speed for 45 seconds until creamy Adding strawberries, cherries and other fruits will make "fruit flavored" yogurt. Just before serving add more fruit of your choice if desired or even sunflower seeds, raisins or whatever sounds good to you. Chill in the freezer for 30 minutes and serve. Start blending 2 cups of soymilk, 2 tablespoons of honey in a blender and add 4 small frozen bananas. Drop in one banana at a time. The soymilk will get thick and frothy and should be served immediately. More sweetener can be added if you want it sweeter. If you don't have frozen bananas on hand this will work too. 1 cup of soymilk 1 cup of ice 3 medium bananas 2 Tbsp. honey Combine all in a blender and blend until smooth. Serve immediately. In the summer, I put this in those Tupperware popsicle makers and freeze them for when my nephews come over. Bookbinders is not vegan, has egg yolks but I am sure there is another brand that is vegan. There are a lot of german and polish brands at my grocery store.” 6:51:17 PM 11/21/02 “ivr got a vegetarian friend who im getting into backpacking, and im looking for good meal ideas- she's not all hardcore nitpicky about anything (uses leather, eats eggs, fish, milk, etc) but when i hike, i usualy have some sort of meat, at least a couple times during the trip...any of you guys have good menus for a vegetarian? i was thinking mabye portabella mushrooms, and/or pastas, but beyond that, i dont really have any particularly good ideas please share the wisdom :) later, -nate” 9:19:27 PM 11/21/02 “Since your friend still eats eggs, milk, fish etc. meal planning wouldn't be too much different. The best backpacking protein you can bring for your friend is TVP granules. Add them to soups, stews or make burgers, meatballs etc. They are extremely light weight and go a very long way. If your just learning, go to the health store and buy some prepackaged products made with tofu. There's mock lunch meats, hummus powder, burger mixes etc. Fantastic Foods makes some good backpacking box mixes.” 6:35:27 AM 11/22/02
