There's one thing I just don't understand at all.

Vegan "meat".
What's up with that?

LOL! i was thinking the same thing, HPM. i guess if you used to eat meat, then something that simulates meat might be appealing...but if you'd never eaten it before then it really makes no sense. i was a vegan before, and i think that fake ham she had in one of those lunches would be disgusting! probably b/c i've never eaten real ham and don't see the appeal of eating something similar, yet processed and full of weird food-esque items. i bet if you read the ingredients it would be about as bad as eating a twinkie! haha.

I went to the NAVS annual 5 day live in convention ( Summfest ) this
year for my vacation.

It is 5 days of lectures ( and gourmet vegan food ) on all aspects of
vegetarianism.

Dr. Michael Klapper, Dr. Michael Gregor, Brenda Davis RD, and George Eisman RD were speaking at it as well as attending Summerfest.

They worked with the staff of Summerfest to make sure everyone attending got a special message from them. That message was that many vegetarians and vegans are not taking care of themselves, .....even minimally.

Dr. Michael Klapper has been running a vegan health research project. He was very serious when he told us that he is seeing a lot of vegans with cardiovascular disease ( b-12 deficiency), neurological issues (b-12), osteoporosis, orthopedic issues, type 2 diabetes ( too many flour products and sweets ) and even clinical obesity( flour products, sweets, junkfood ).

The other vegan health experts there confirmed Dr. Klapper's findings with their own clinical experiences.

In a nutshell, Dr. Klapper said many of the problems he has seen go back to vegans ( and vegetarians ) needing to regularly use a reliable source of vitamin B-12, increasing their calcium intake, increasing their intake of fresh green vegetables, increasing their intake of fresh yellow/orange vegetables, securing a source of iodine, securing a source of essential fatty acids, reducing their consumption of sweets, minimizing their use of refined flour products (pasta, breads, bagels,
etc.), reducing sodium, reducing consumption of processed foods and getting more exercise. This is not a new message, but the experts at Summerfest emphasized -- with a palpable sense of caring and urgency -- that many vegetarians and vegans are simply not following this advice, to their great detriment.

I would have to write a book to go into all of the fascinating details, but Summerfest speaker Brenda Davis, RD has already revised her great book "Becoming Vegetarian" to cover these issues. The book covers both veganism and vegetarianism and I recommend it to everyone as being the best veg*n nutrition book I have ever read.

Anyway, sorry to blather on and for being overly serious, but the talks I went to made a big impression on me. These speakers were experts, pro vegan, pro vegetarian, and WORRIED about the community.

i totally believe it that lots of vegans/vegetarians aren't getting proper nutrition...just like a lot of the rest of the population. i think for vegans/vegetarians, the main reasons are:

1) many people become vegans/vegetarians when they're young and idealistic and basically think they're going to live forever, just like everyone does when they're young. so the last thing they're thinking about is nutrition.

2) for lots of vegans/vegetarians, the main reason they change their diet isn't because of their own personal health, but b/c of philosophical issues.

I was a vegetarian (still ate eggs and cheese and fish on occasion...think B vitamins) for 7 years. I've never been healthier, had more energy or just generally *felt* better!

I started eating meat again on a regular basis about a year ago b/c Dug is a meat-n-potatoes kind of guy and is a little picky about dinner! lol.

Eating a lot of meat over say a week, still gives me terrible stomach aches (the reason I went Veg in the first place).

This lady's lunches look yummy to me! As for her kid. If he's grown up with it, he prolly likes it. And it looks like she makes it fun for him.

I seem to remember Fordy eating all kinds of "weird" vegetarian foods... Soy milk straight out of the container for example!

It's also our duty to eat crap full of chemicals and avoid organic foods and purified water. Since we have only a few generations left before we will have a totally toxic environment, the human species must expose ourselves to many toxins if we are to evolve any resistance.

Feeding your children Vegan foods isn't so bad as long as it is processed and contains adequate preservatives. Avoid the organic stuff.

If you must eat healthfully, do not reproduce and do not expose children to a healthful diet. The entire gene pool must pass through the filter of toxic man made chemicals if the human race is to survive.

see, there ya go! there's nothing inherently healthy or unhealthy (for you or for the planet) about a vegan diet, or about a diet incorporating meat. there are all sorts of other factors to consider, such as what processed, chemical-filled foods are included, and what organic foods. you could be a vegan who eats french-fries for lunch every day and knows nothing about pesticide-filled food vs. organic (like i did in high school, LOL!) or one who eats a varied, supplemented organic diet. likewise, you could be a meat-eater who indiscriminately eats all types of meats and twinkies (LOL) or one who eats only organic food including free-range/wild-caught fish & poultry (like i do now).

Oh yeah, Ford LOVES soy moo ;-P We go thru 3 or so containers a week of Silk. He likes tofu..he also loves wild pacific salmon, carrots and broccoli.
But hey, I am not a total health nut..afterall, when we backpack, we get store bought treats then (ie...fruit snacks and donughts..lol!)
Not sure if my 2 lb bricks of homemade fudge count as healthy ;-)
