So how the hell do ya know when sour cream goes bad, anyhoo? I mean, before it turns green and stuff. Seems to me it's kinda like kimchee...

Lyra probably has the best solution, but I often substitute plain yoghurt for sour cream in recipes. You could probably make it last a couple of day in the original container. One day burritos, next day desert with some wild berries.

King Arthur Flour sells powdered sour cream. I use it with stroganoff and to make dried eggs creamier. I don't think it would taste too good by itself.

Piedmont Portabella 'a la camp stove:
- steam leeks and portabella mushrooms (both sliced thin), dehydrate.

- make non-buttered caremlized onions: slice onions and simmer in water for a long time. If you cook them slow enough, they will kind of brown up and some chemical thing makes them sweet. dehydrate.

- package the leeks,portabellas, tomatos, carmelized onions with about 1/2 Tb of brown sugar, and a coupel pinches of onion powder, noodles.

- at camp, cook and top with goat cheese (sold at grocery stores in nice little sealed packages, also good on tortillas for lunch the next day!

bp, I can do it with or without vegi's
I have dehydrated scallops, mushrooms, shrimp, steak, chicken, beans, ham...I can cook anything out in the backcountry, that can be had in a resturant. soups...I'm gonna try to dehydrate some wine and then rehydrate it, just to see what happens. still lasagna is my favorite,,,the beans and ham is real good too...spread that on pita bread with some rehydrated tomatos...yummy...im gettin hungry right now.

I got some more strawberries in the dehydrator. I cut them a lot thinner this time, so I suppose they might stick to the trays more, but last time I followed the directions that came with the dehydrator which is basically to cut everything that goes in there 1/4" thick, everything I did turned out pretty good but it all took longer to dry than I expected and I thought everything (pineapple, strawberries, jerky) was still a tad chewy. So we'll see how it goes.

Roam - I finally found the A1 cajun marinade, I'm going to try that out next.
Also how did you go about salting the meat? I think I salted it way too much last time.

we had a 5 gal bucket and 3 huge grocery bags of em. I filled the dehydrator everyday for a week and hardly made a dent, sass canned 14 qts of pear sauce. They are sooooo yummy.

um...if your turkey jerky is so dry and crunch that it tastes like ashes, youve dehydreated it too long and even the dog wont eat it... :(

Yeah, but not too chewy, when I cut 1/4 inch the jerky just didn't turn out right (of course it could have been because I salted it too much). And the fruit was difficult at that cut because you'd have pockets of moisture in pieces when the rest was already well dry. I cut the strawberries about 1/8 inch this time, which I think was just a bit small, although they came out ok, so next time I'll try to cut somewhere in between.

If you marinate the meat you shouldn't have to salt it. There should be enough salt in the marinade to start with.

I might try that Ewker, but I think salting it still is probably a good idea, I just used less this time. It'll go in the dryer tommorow so we'll see how it goes.

Actually I'm not a big salt fan either, I never put extra salt on my food. Which may have been why I didn't much like the first batch of jerky.

dehydrating
Say, are you using electric powered dehydrators or the home made kind, like mesh screens?

I borrowed a friend's electric one for a while. I liked the results but the noise of the motor was distracting.
Any advice?

(besides buy your own!)
