Today was a veggie burger.
Tonight is chicken breast cooked in white wine, lemon juice,cracked pepper, garlic, and shallots, with broccoli and sweet peas.

Curahee, I tried the veggie burger thing twice to develop a taste for it since I'm not a big meat eater, but it just didn't work.

A good way to cook that chicken would be to egg it and dredge it in flour to fry it in butter with a shot of oil. The oil keeps the butter from burning too easily. Then take the chicken out to add the wine etc.

Homemade 15-bean soup -- Good stuff!

I'm sitting here thinking that I might go home and try to dehydrate the huge pot I have left there. Only problem is its a little greasy from the sausage. Any thoughts?

Put some parchment paper on the racks of your dehydrator and dehydrate it as usual. When it's done, use paper towels and pat the grease off of what's left. Store in ziplocks in the freezer.

If you do a really good job of getting the grease off, you may need to add a little oil when you rehydrate to make it taste right.

No problem, I dehydrate greasy stuff all the time. If you keep it in the freezer, sealed up good, the fat won't go rancid. But I did discover to my dismay that no fat at all can make some things taste bad, or not taste good anyway.

Gem, what brand of frozen dinner do you have? I find a lot of them don't have enough veggies in them. But Lean Cuisine now has a low carb one which they add much more veggies. I wish they were just more balanced in general.

I have leftovers from Duke's. Salmon stuffed with cheese and crab and snap peas. YUM!

the cheap michelinas have a new lean gourmet serious out. very low cal. Oh, I do stretch them a bit with a little more frozen veggies though.

My favorite is the meatloaf and veggies.

I eat those Lean Cuisiens like they're going out of style. The meat loaf, stuffed cabbage and sesame chicken are my favorites. I have to have a big salad with it though or it's not enough.
