I had an eggplant/buffalo mozzarella, tomatoes and red pepper spread sandwich on foccacia bread.

Also Corn and red pepper bisque... YUMMY!

I worked in a hotel that served Shepard's Pie for lunch sometimes in the cafeteria and it was very good. Since I love mashed potatoes, that part made it really good. I was just recently looking up recipes for it. I think the hotel made it with corn in with the chopmeat. Some recipes call for corn and peas or just peas and some say to put stringbeans in the chopmeat. I wish I could remember what the hotel used it was either corn or peas.

Leftover chicken soup is good!!!! Chicken corn chowder is good too.

I knew an old guy in town that was one of those guys everyone knew. Well he let everyone know how much he liked eating coon. Son on Saturday and Sunday morning he'd go check the front porch and see how many dead coons all the hunters left from the night before. Yummy yummy!

My kitchen smells wonderful.
I'm cooking my special chili!

Brown a pound of ground beef in a BIG skillet
drain
add a can of Rotel with green chilis
add a can of whole tomatoes
add a can of kidney beans (drained)
add a Bay Leaf
add about half a pack of hot chili seasioning (or more if you can handle it)
add a sprinkle of chopped dried onions

slice up a package of mushrooms and add

Simmer till done.
Remove Bay leaf.

YUM!!!! My acid reflux is gonna kill me tonight!

Nigal, sass wants one of those, sounds worth it.

Lunch was homemade veggie lasagna with steam broccoli and cauliflower (fresh from the garden) and whole wheat bread.

Dinner has been cooking since 9am, a big ole pot of 15 bean soup with a GIANT ham bone.

Afternoon snack will be fresh cider and donut at the cider mill.

I have a homemade sandwich today. Turkey and cheddar on whole wheat with Dijonaise. Have braised kale for some nutrients. Not terribly exciting.

Bacon tastes good on everything. I submitted to my boss the other day that bacon would taste good on ice cream. She thought about it for a minute, and agreed.

That precooked bacon is killer for backpacking!!!!

you're very right, sacco! i've been stocking up on all my essentials that i might not be able to find in VT, though. like, there's a specific type of lotion, shampoo, etc. that i just HAVE to have, so i've bought like 10 of each, HA! i think i'll have to add Potbelly's subs to that list, hope they freeze well...
