I'm making me up a gooooood pot o' pintos for this weekend. I just put in some salt pork, an onion, some garlic powder, and some cumin powder though.

Yum. Make a big pan o' cornbread, and sit around making greenhouse gases.

Nah, HPM's not eating these. They're all for me. He'd eat 'em if I added a bunch of salt pork or ham, onions and garlic, and served it with rice or corn bread.

I use Pinto beans when I make beans and rice. If I don't use them, I use chick peas or great northern beans.

Lunch.....I belong to the dieting thread now, so a late lunch will be non fat vanilla yogurt from Costco. A huge 16 oz portion is only about 300 calories.

i made some potato cheddar soup for lunch yesterday and brought enough left overs for today AND tomorrow...i just ate all of it for lunch...i'm soooo uncomfortable

I invited half a dozen close friends over for New England boiled dinner yesterday, glazed corned beef, potatoes, carrots, rutabagas, onions and dessert. Leftovers today and maybe most of the week:)

Just made some rice and beans for dinner yesterday. I love rice and beans, cajun style, Italian style or Spanish.

Dieting!!! Lunch is a chunk of lettuce with low cal dressing.

Tator tot casserole - can be easily re-warmed! I use cream of potato soup (low in fat and calories), ground round, mixed frozen veggies, and a few tator tots on top. It'll be lunch all week long.

This may be getting old, but I might go to Costco again for a non-fat yogurt, but maybe I'll change things up and get a chocolate one.

This one guy that was giving away samples there had tons of cheddar cheese between flour tortillas with a little ranch dressing spead on the inside along w/the cheese for an extra kick and he said to take as many as I wanted. Ugh, if only I wasn't dieting! Some people who do samples at Costco don't like it if you take more than just one sample.

I went to Sams Club at lunch yesterday to check on sarbar's cheese sauce mix.
By the time I hit all the sample tables, I didn't need any more lunch. ;-)

stove, I know. I think I stopped losing weight from sampling too much. When I go on weekends, there never seems to be samples out, but during the week, during the day, there are tons of samples and I've been lucky, or maybe not lucky that I like them all.

The breaded cooked, then frozen chicken they sell is fantastic,very moist. The other day they dipped samples in I think was a ginger sauce; it was so good.

Naked hot spring soaker is lunch for bob cat:

On the afternoon of February 1st, a visitor was attacked by a bobcat while visiting the Hot Springs area in Big Bend NP. The visitor, a 49-year old woman from Wisconsin, had just gotten out of the hot springs pool when the bobcat leapt towards her, sinking its teeth into her left arm and wrapping both front legs around her torso. The woman was able to shake the cat loose and it fell into the pool. The cat then got out of the pool, walked a short distance away, defecated and departed. About half a dozen visitors were in the area when the attack occurred. One visitor who was approaching the hot springs on the trail saw the cat about 50 feet away, loping towards the visitors in the spring. He said that the cat broke into a run when it was about ten feet from the woman, then jumped on her. The woman sustained deep puncture wounds to her left arm and scratches and punctures from claws to both the front and rear of her abdominal area. She was treated by park medics and sent to a local hospital for a follow-up exam and tetanus shot. All witnesses agreed the cat was acting normally and appeared healthy. Rangers closed the area to visitors and began attempting to locate the bobcat.

Acting normally?!?! I wouldn't say walking into a populated area and randomly attacking someone is acting normally for a bobcat.

A couple tuna fish sandwiches on whole wheat.I did drink a few glasses of a formulated electrolyte replacement drink in Fruit Punch. I bought 4 cases of it & getting a little tired of fruit punch. My wife is also going to strangle me if she finds any more red stains on her kitchen counter top from the mix. Down to my last case & a half.

I tried to make red beans & rice last night, it was weird. LOL! I don't know how to make it, and didn't feel like looking up a recipe. I don't think I should've put the mustard in it. :-D Tarpy said the smell made him sick.

It wasn't that bad though really, I had the leftovers for lunch.

I'm making potato-leek soup (now that recipe, I did look up) for dinner tonight! Or ramps, as the weirdos around here call them.

Bitpusher's Red Beans and Rice:

Rice Part:
1.5c dry white rice
3c water

Bring 3 cups of water to a boil, add rice, turn down to simmer for 20 minutes.

Meat Part:

1 Real Actual Meat Polish Kielbasa
2 14oz cans Red Beans (not kidney beans!!!!!!!!!!!)
Tony Chachere's Original Creole Seasoning
Onion powder
Garlic powder
Ground cumin
1/2c water

Slice the Polish Kielbasa into 1/4in thick slices, on the bias. Brown in a skillet. Add two cans of red beans to the skillet, along with the 1/2c of water. Stir. Add about a teaspoon each of the garlic powder, onion powder, and ground cumin, and about a tablespoon of the Tony Chachere's. Stir again. Allow to simmer until the sauce has thickened, then serve over rice.

Serves 4 adults, 2 Cajuns, or my son.

The last batch I made at home didn't turn out so well. I bet the not browning the saugage was where I screwed up. It was way to greasy.
