SS...I always brown the sausage, that way some of the fat gets glazed onto the pan bottom. Plus I use a good quality kielbasa, not a lot of fat to start with.

I love rice and beans!!!! There are a few different ways to make them.

The thing is, you have to have a good idea of how to make something, because at the www.cooks.com site, there are some very "off" recipes, like someone using cottage cheese instead of ricotta for lasagna.

I made my superbowl chili with 3 types of beans, pink, black and great northern beans. It was fantastic.

Lunch....I had a bowl of chicken soup, minus the chicken w/just carrots and celery, oh and a tiny bit of white rice in it.

Spirit, I also make my own chicken corn chowder (w/potatoes) which I love. What is that yellow stuff on top of the pot? And what is that orange looking stuff on the left side of the pot?

Spirit, I thought those may be cheese shreds, but I couldn't tell the other things were carrots. I thought it could have been bacon. I sautee some bacon and put it in the chowder along w/carrots, corn, onion, celery and heavy cream. So I basically make chicken soup, then shred the chicken after it's cooked and add heavy cream, corn and bacon.

What, no heavy cream????!!!!! Unless that cheddar is low fat, you can substitute it for heavy cream, but I guess you prefer cheddar. I'm not a big cheddar fan like everyone else in the PNW.

actually, I use skim milk, sometimes 2% and the mashed potatoes to thicken it.

Spirit, excellent idea, using the potatoes as a thickener. In Indian dishes, they use chick pea and lentil flour to thicken things. Italians sometimes use pieces of Italian bread in soup to thicken it.

Lunch...a low cal panini. I used a slice of low cal skim Jarlsberg cheese w/a few paper thin slices of Black Forest Ham w/low cal mayo mixed with mustard. Then I applied a tiny bit of olive oil with my finger to the outside of the bread to fry it in a non-stick pan.

Man, I haven't had any of that since high school. Good on soft wheat bread w/ ketchup and mustard. Like a flat hot dog.


Tombstone light veggie pizza. I'm hooked on it. Adore it. It may be the best thing available in the freezer section (not including ice cream).

I like the Degorno deep dish pizza. It even comes with a reflector shield thing that goes on top to help cooking. It's nice and thick too.

Sliced avacodo, pepper cz, roma tomatoes and spinach leaves on pumpernickle rye. Fresh strawberries, mush melon and pineapple. The fruit was complementary... left over from an office meeting earlier today.

I had a kiwi, a whole-wheat zucchini muffin, and some baba ghanoush (sp?) with crackers. Weird, I know.

He he he, Laurel's freaking out over lunch. I cooked the last of our "rose Finn" and "purple Peruvian" fingerling potatoes, added diced chicken, minced veggies, a little relish and other stuff to make the funkiest potato salad I've ever seen. THe purple ones vary from light lavender to purple so dark it looks black. They have a really good flavor, too.

Mmmm, that does sound good!! I'm getting ready to have some butternut squash casserole I made. It's good, but I'm now on the 5th day of eating it...that was a big squash. And Tarpy would rather kill himself than eat butternut. Some people don't know what's good!

I made up a couple huge pots of cabbage soup today. I put in white and purple cabbage, cut up kielbasa, diced tomatoes, diced onions, paprika, basil, Spike, garlic, and onion soup mix. The house smells wonderful!

I love pasta. Therefore, I am having the Nalley brand of chicken soup for a late lunch. They use these thick egg noodles. I think Nalley may only be on the west coast. They make chili too and let's not forget the oh so popular chilimac.

I'm more interested in dinner. I making this pesto/chicken stock/garlic sauce to put on pasta w/grated cheese and broccoli.
