Half a can of refried beans spread on a plate with Cheese Wizz spread liberally over the top and then nuked for a couple minutes. Salsa on top and scooped up with chips.

Looks like I'll be spending some time by myself this afternoon.

I make some really great baked nachos. I serve them as an entree they're so good.

Here's the recipe:

Ingredients:

1 lb. ground beef
Tostitos Tortilla chips
1 can pinto beans (you can substitute refried beans if you like, lazy asses)
1 medium onion (not needed if you use canned refried beans, lazy asses)
chili powder
onion powder
garlic powder
ground cumin (also not needed if refried beans are used)(lazy asses)
salt
grated cheddar and jack cheese, about 2 cups (I use the pre-packaged stuff, this is my lazy part)

Preheat oven to 400F. Cover the bottom of a 13x9 baking pan or dish with the Tostitos. I try to make sure the chips are at least two or three deep all over the bottom of the dish.

First, prepare your own refried beans. Lazy asses can skip this part, to your peril.

Dice the medium onion, and carmelize in olive oil in a skillet. Add the can of pinto beans, mixing well. Let them simmer for a couple of minutes, then mash using a potato masher until all the beans are crushed and you have a good homogeneous mush. Add about 1 tsp. garlic powder, 1 tsp. onion powder, and about 1/2 tsp. ground cumin seed. These are approximate, adjust to your taste. Add water to the mixture to make it pourable, about the consistency of thick pancake batter. This should be done even if you are using canned refried beans (lazy asses).

Ground beef: (Vegans can skip this step and the nachos will be just as good)

Brown the pound of ground beef in a skillet. Drain it if you're worried about fat. Salt to taste, and add about 1 tbsp. of chili powder, and 1 tsp. each of both garlic and onion powders. Again, these are approximate, your mileage may vary. Mix beef in with the refried bean mixture.

Pour the beef/bean mixture over the chips in the baking dish, trying to completely cover the chips. Use a spoon to spread the mixture out even over the chips if need be. Then, cover the whole thing with the cheeses.

Place the baking dish in the oven and bake for about 15 minutes, or until the cheese is nice and melted and bubbly. Remove from oven, and let sit for just a few minutes to let the cheese re-solidify, then serve.

Serves 2-4, depending on how much of a pig you are. The recipe can be easily doubled if more people than expected show up, just be sure and use a larger baking dish.
