3/4 lb. bread crumbs
1/2 lb. suet
Salt and pepper, to taste
1 qt. milk
1 c. cooked barley
1 c. dry oatmeal
1 oz. powdered mint

Haggis is made from sheep's offal (or pluck). The windpipe, lungs, heart and liver of the sheep are boiled and then minced. This is mixed with beef suet and lightly toasted oatmeal. This mixture is placed inside the sheep's stomach, which is sewn closed. The resulting haggis is traditionally cooked by further boiling (for up to three hours) although the part-cooked haggis can be cooked in the oven which prevents the risk of bursting and spoiling.

Haggis
BASO4, you forgot the 1˝ cups of oatmeal, two onions and salt and pepper. Eaten with bashed neeps (mashed turnips) and bashed tatties (mashed potatoes) and accompanied with a decent malt, you are in heaven.

Blood (or black) pudding, called 'boudin' in french is also delicious.

So there, all you plastic wrapped, suburbanite, Disney spawn.

Blood Sausage
I worked as a cook & smoker at a sausage factory. Yes, we made blood sausage, tongue and blood sausage, head cheese(pork tongue and fat cooked cooked in a pig stomach) along hot dogs, and other sausage!

Artex, you ever been to Germany? They'll eat blood sausage, but not a steak the way we think of a steak.

Then again, in Europe, I don't eat any beef that hasn't been damn near burnt...

Why bother? I only make sure they eat it first, then I figure it must be pretty safe.

I've actually discovered I like some pretty weird stuff. In my wife's region, there's a dish that's basically a sausage made from the stomach of the pig. It's great!
