1 hardboiled egg, sliced
cheesy parmesian bread
dolup of miracle whip

I also think the freeze dried egg omlets are good in the morning. Especially when it's cold.

An egg will keep overnight in warm areas if insulated. We also occasionally get miracle whip and other mayos in the individual packets.

I've packed raw eggs in August in Florida with no ill effect. Hens don't exactly lay eggs in air-conditioned comfort ya know. Americans are conditioned to think food spoils quicker than it actually does.

As long as you don't keep them in the heat for a long time you should be ok.

I've noticed that too HPM. In America, the prevailing attitude seems to be, "If it ain't cold, it's gone bad."

I saw a documentary on a family that was sailing around the world. They kept their eggs fresh by turning them once a month. Supposedly they won't go bad unless the yolk comes in contact with the shell for a extended period, and it takes about a month for the yolk to fall through the albumen.

I read that raw, uncracked eggs will keep for 3 weeks at room temperature. I guess they didn't know about that little turning trick. The hard part is to keep from breaking them in your pack.

Raw eggs will keep without refrigeration for quite a while. They will go down from Grade A which means that the albumin will weaken.

Most of the expiration dates seem (at least to me) to be the direct results of lawsuits.

When I pack raw eggs I just leave them in the carton. I cut off a setion of carton with the number of eggs I want and wrap it in a shirt.

I have never broken an egg that way.

I've got one of those little plastic egg keepers, but I've never used it backpacking, just carcamping. But at least it didn't break the eggs when I put them in it, lol...

Fresh eggs will actually keep several days even under the warmest conditions. Several state do not require eggs to be refriged, not to mention how long it takes an egg to make it to market. For what it’s worth, I remember Dateline mentioning this a couple of years ago proving how useless expiration dates really are.

Yeah, I've got one of those too. I have used it pretty successfully on backpacking trips but I do wish I could find one smaller. I don't usually eat many eggs and a six egg holder is just taking up valuable space and ounces.

Funny story.

When Madman went hiking with me for the first time it was August and stinking hot. On Sunday we get up to make breakfast and he busts out some MREs.

I proceed to make fresh three egg omlettes with cheddar, pepper jack, ham, bell pepper and tomato nicely spiced.

Dude freaks out. Apparently his wife is one of those "It's been in the fridge for two days it must be bad" people.

Want some eggs or would you prefer that crap you are eating?

I think the exp. date has more to do with albumin quality than anything else. Past a certain point of runniness, and they're no good for baking because the proteins have broken down/ short-stringed themselves.

I hard boil eggs and carry them in the little yellow container. I might crush one up in instant grits along with some powdered cheese and bacon bits. Or I might just eat the egg and have some oatmeal. Both good. Never had an egg crack in the carrier, but I don't feel like cooking eggs while backpacking because of the grease needed to fry them.

I carried in six eggs (raw) in a little plastic thing I got FREE from the market when they had an Easter special jello mold promotion. This little thing was for making egg shaped jello but I saw the possibility inherent in the design. Only small eggs fit but it snaps shut and they are fine. I put them in the River and loaded it down with a rock and hoped no racoons would come to raid the egg basket. (None did)Had fresh boiled eggs and egg drop soup for five days. Eggs were fine in the water which was sort of cold but not refridgerator temp. for sure. I can vouch for the sailing with eggs part because my sister in law told me the same egg turning trick to keep them for a month or more (and in the tropics where she lived for 15 years) The egg drop soup is especially easy, just break an egg into your noodle soup when the noodles are done and stir it up. yummmy!

I'm glad to see this discussion. A few months back I wanted to cook and omlet, but the eggs were a month past date. My wife thought I was nuts. I went on the "exp date is due to lawsuit tirade" and she really thought I was nuts. She told me to call my mother who also thought I was nuts. Good to see that I'm still nuts, just not for the reason they thought.

It's worth trying. It might be gross, but it just might work too. I dunno about an omelet, though. Sounds a little tricky. Maybe if you cut it up into pieces instead of dehydrating it whole. It bet that would work, and it would be good.

I heard fresh eggs keep longer than hard-boiled.

I've carried eggs in my pack in a Pringles container, filled with oatmeal.

I've heard you can coat fresh eggs with Vaseline to keep them longer. Never done it tho.

According to the book that came with my dehydrator, it states that you must handle the drying of eggs very carefully to avoid staph or salmonella infection. Everything must be sterilized and stored in sterile air tight containers. Every exposure to air runs the risk of bacterial growth. If handled correctly you should be OK, but to be on the safe side it may be wise to just buy freeze dried eggs. It's your call whether you want to try this or not.
