Smoker Run Down A smoker oven really only needs three things - a heat source - smoke - and something to contain the heat and smoke. Here is my lightweight smoker-oven thus far. The burner from a gas grill has been holding up to the heat, and I am able to control the heat. Over the burner I place a pan with wood chips. A cardboard box is raised above the burner and chips. The meat racks (baking cooling racks)are attached inside the box. Vents at the top allow for additional heat control and good air flow (which is also important,unless you like a scorched taste). Last week I smoked a pork roast that turned out great. (200-225 degrees for about three hours) I am going to try the oven later this week without the wood chips and see if I can bake a pie in it. Don't know if the box will handle the higher heat. I will line it with foil. It turned out really good.” 5:01:54 PM 9/01/02 “Opie - I don't have a digital camera or I would send ya a picture. I forgot to mention that a heat baffle (foil) needs to be placed below the rack directly over the heat source. This disperses the heat, evening out the whole oven temp. If not the heat would column straight up the center of the oven. I believe this heat baffle has also been the cause of my burner melt downs. This increases the temp in the stove area. If all ya wanted was to melt cheese on your dish or even bake a cake, then I would suggest playing around with your cardboard foil lined bx and some charcoal bricketts. You should be able to easily hold a steady temp for a hour or so. I would look at those foil roaster pans to put the charcoal in. (very lightweight) Just make sure that the charcoal is completely white or you may end up with a foul taste. Use some sticks to hold the box up over the foil pans. I have been using some lath (sp) and a staple gun. Or the indirect heat method would be like the scouts use. Put your food up on some small rocks, Place Foil lined bx, w/one end cut out, over your food. Hot coals placed near the open end.
