The first bar I ever frequented had a jar. The bartender said they'd been there for years and would offer free drinks to whoever ate one - no takers.

The Pennsylvania Germans make pickled red beet eggs. You take a jar of pickled beets, add some water, plop in some peeled hard boiled eggs, and in about a week the eggs turn bright crimson. They are sooooo good! Of course, nobody wants to eat the beets, but they are good too.

I while back I worked in as a barmaid in the evening for extra money. I used to make pickled eggs and bring them in to sell. Pickled eggs chased down with beer makes for a great dinner. I think I ate more eggs than I sold (probably drank too much beer too).

I think I would love pickled eggs, but the jars in the bar always look like that got floaties in them... so I don't indulge.

I love fried pickles though... and pickled herring!! yum!! and beet herring salad!! We eat that for New Year's for good luck every year. Its pink...

Actually, recently, they couldn't serve pickled eggs for about a year because they made them in the apartment upstairs, and it wasn't approved for commercial cooking or something. I think they're back on track now though. I haven't been there in years.
