Hey Bit!
Southern Food?
Found a recipe for your next cookout.


Chitterlings A La Decatur

20 pounds of chitterlings
2 cups of chopped onions
2 cups of chopped celery
6 cloves garlic, minced
7-8 small hot peppers
3 teaspoons of salt
2 teaspoons of pepper
2 teaspoons of cider vinegar
2 teaspoons of sugar

Soak all chitterlings in warm water 30 minutes.
Cut each into 12-inch pieces.
Slit open.
Remove all fat particles and debris.
Wash in warm to hot water 3-5 times.
Place in large Dutch oven or heavy pot.
Add onions, celery, peppers, garlic, salt and pepper.
Bring to a boil.
Reduce heat.
Cook on medium-low heat 4 hours.
* To cut odor, drop two white potatoes in pot.

We raised a few pigs a long time ago. I saw and smelled chitterlings being made when I was a young kid. Haven't eaten one since!

I think in Britain you use them for blood sausage casings...lol...

That's what we used to use them for, too, casings for other kinds of sausage.

Another Southern favorite is souse. Essentially, it's pig jelly, lol...

There was a show called, - something about River Cottage, in UK a while back, showed traditional recipies. This guy raised the pig, then had it slaughtered and used every bit of it - was great show

I was helped by the fact that they allow you more than one try at each answer. If it hadn't been for that, I would probably have done much worse, more like 20%.

I did know about the Scottish and Welsh things on there, got them first try.
