Full length side zip with mesh. Block the wind well in winter when zipped. Generous fit for insulating undergarment wear in winter. You can get a small one just for Summer... or... something slightly bigger and be set for the colder months, too... I've recently heard people on this site grumbling about the camelbak hydration systems themselves (i'm a Platypus Man, m'self <aHem>). I don't know who has a good selection these days. I just checked Mountain Gear and they've only got a few "hydration packs" and what they're calling "Technical Daypacks" are 3000+ cubic inch backpacks costing $150 and up. This Saloman Aquastream looks pretty zippy, but I don't know what kind of rep they have for this sort of thing. I've just heard of their boots, but I guess they're branching out. The Black Diamond Zippo is a somewhat larger and has a few more doodads. Their reputation for quality is solid. Looks like Platypus is going into the pack market, too....
