Power Muffins

a recipe for you of my own making
Power Muffins (coconut-almond)

Mix together:
1/3 cup Olive oil (or margarine)
3/8 cup Unsulfered blackstrap molasses
1/3 cup Honey (Or 2/3 cup honey with no molasses)
1 cup Water
2 tablespoons Powdered skim milk

Sift in:
2 ½ cups Oats
1 cup Whole wheat flower
3/8 cup Brown sugar
¼ tablespoon Salt
¼ tablespoon Baking powder

Stir well;

Add:
½ cup grated coconut (fresh dried is best, store bought is good)
½ cup almond slivers
(or substitute anything or combination you desire (walnuts, pecans, craisins, raisins, dried fruit) to total 1 cup.)

Grease or spray muffin pan
Fill each muffin hole about two-thirds full.
(You can spread this mix on a greased cookie sheet or bread pan (5x7), but I like it much better in a muffin pan because each muffin is crusted all around and holds up better for traveling.)

Bake at 300 degrees (F) for ONE HOUR.
Don’t take them out.
Cut the temperature back to 200 degrees and open the oven door just a tad with a spatula.
Let cook (dry) for another TWO HOURS.

Best I can calculate, the total yield for the mix is 3500 calories; 640g carbohydrates; 80 g Fat; 60g Protein. Divide this by the number of muffins.
12 muffins = 292 calories; 53g Carbohydrates; 7g Fat; 5g Protein each

Store in the freezer
Keeps on trail for weeks, or until the blue fuzzy stuff starts to grow.

You can substitute carrots in this recipe if you wish. Substitute for 1/2 cup of coconut or almonds or both.

Carrots are sugar laden food. Carrots are a high starch and sugar food, just like potatoes and bread. This recipe is oat laden with some stuff to give it a better flavor and hold it together. Complex carbs, not simple sugars like...carrots!
