Rice with steamed vegetables, and baked flounder fillets seasoned with salt, pepper, lemon juice, olive oil, and Emeril's Southwest Essence.

I made a suprisingly good fish curry. I usually suck at cooking fish and this is really tasty. It has an onion and tomato based sauce with ginger, garlic, cumin seeds, fennel, coriander and lots of good stuff. I made a nice pilau to go with it. Yum!

Meat Fest
OK. Today was our annual "Meat Fest" for my son's birthday. He invites his friends over. Every year we add more meat today we had:

Chicken smoked with applewood
Beef ribs smoked with hickory & applewood
Pork ribs smoked with hickory
Tri-tip smoked with mesquite
Pork cooked in BBQ sauce (Dutch oven)
Beef ribs cooked in BBQ sauce (Dutch oven)
Pork cooked in Chile Verde sauce (Dutch oven)
Salmon smoked with alder wood
Deep fried turkey
Grilled veggies

Anyway, we had about 33 people who showed up. It was fun. I think I may be qualified for the Atkins Hall of Fame!

Just finished a wonderful yellowfin tuna staek marinated in balsamic vinegar, olive oil salt pepper and garlic powder, seared and served on a bed of wilted spinach and warm tomatoes with a side of white beans and brown rice with lemon juice and lemon pepper...GOOD EATS

My mom puts on a major spread evry Sunday for the whole family and whomever the family wants to bring. Sometimes there are as many as 20 people eating there and there is always enough to go around. I also make me a plate for work the next day.We all offer to pay for the food but they won't hear of it but this morning I bought the Dinnerbell Ham for Christmas and made them take it.I hope that my wife will want to carry on this tradition when my mom no longer can. It all started with my Great Grandmother. I grew up eating every Sunday at MY Grandmothers house.

I bought myself a slow cooker in the early part of the week, so yesterday I cooked up a pork loin with rosemary & a little garlic, potatoes, carrots and onions. Chocolate chip cookies for dessert. Since there's only me, dinner tonight was more of the same. I even did the dishes while I still had some clean ones left in the cupboard.
