Jerky!

Jerky advice?
I am in the process of making my first batch of Beef Jerky. I used a Southwestern seasoning pack from the store. It tastes alright. Anyone have any marinading recipes? Or other hints and tips? I already figured out that I have to be alittle nore careful slicing the meet into even strips.

Cut across the grain of the meat.

1/2 tsp. Cayenne pepper
2 tsp. Crushed red pepper
2 tsp. Garlic powder
2 tsp. Onion powder
1 tsp. Ground black pepper
1 tsp. Cracked black pepper
1 tsp. Brown sugar
1 cup soy sauce
3 lbs. lean meat

Mix ingredients together and marinade for at least 6 hours. Dehydrate at 145 for 5 to 10 hours."

Thanks, Zac I will try that marinade on the next batch. I already knew about cutting it. I used a london broil and I new you have to cut them that way. What type of meat do you use?

I usually marinate to taste, so my recipes are in my head and hard for me to put down on paper. However, I have had some great jerky come out using a formula like this. BTW, you can this adapt to the products you like, but the concept is as follows:

Mix a few BBQ sauces together. I like Sweet Baby Ray's, KC Masterpiece and any Hickory smoked variety. Then I mix in a few Chinese red sauces. Mikee Chinese rib sauce is great and I think it's Kikkoman that makes this red 'Chinese Dipping Sauce' that I use. The stuff is awesome. You can mix it up and use it that way (to taste) or add a little molasses and brown sugar is you like. But, that may sweeten it up too much for some folk's tastes. marinate slices of London Broil for a few days and voila!

I first cut the steak up, then I like to soak the steak (sirloin) in cheap wiskey for a day or two. Then, take it out, don't dry it off, and rub some cayanne pepper, cajun spice, and Mrs. Dash Hot seasoning.

Dehydrate, eat and light a match in front of yer mouth afterwards. The flame looks best at night, or dusk........:)

Oh yeah, forgot the extra spices. This is where I get a little lost. I just do them on automatic pilot, so add your favorite spices to the mix and the combination comes out really good...

The last batch I made was with sandwich stakes (strip stake cut into small sandwich sized steaks) that were about 1/4" to 3/8" thick. I cut them into smaller strips so they would dehydrate faster.

I have tried all kinds of recipes but this is by far the easiest and tastiest i've made....

12 ounce grape jelly
8 ounce hot sauce (franks, tobassco etc...)
1 tbsp ground drid hot peppers (i make my own, a mix of jalapeno and cayanne)

mix jelly and hot sauce in pan and simmer and stir till mixed well. Add peppers, remove from heat. Dip each piece of meat into mix making sure meat is covered completely. Place on dehydrator. After 4hours or so take 1/2 cup of honey and heat till thin in microwave. Bursh honey over meat and dehydrate another 8 hours. Its fan-frickin-tastic! Also a great suace for BBQ hot wings.

I am curious as to how the salmon turns out. Let us know how it goes. I have never made fish jerky but a maple or honey salmon sounds good.
