No reubens today. We found a recipe for rebuen "hush puppies" that we might try out this week. Mmmm.

No problem, currahee.

Reuben Hush Puppies (from Cuisine At Home)
Makes about 2 dozen. Total time: 40 minutes.

Combine:
1 c. cooked corned beef, diced (4oz)
1 c. rye bread crubms
1/2 c. sauerkraut, squeezed to drain, minced
1/2 c. dill pickle, diced
1/2 c. whole or 2% milk
1/3 c. all-purpose flour
1/4 c. yellow cornmeal
1/4 c. scallions, thinly sliced
1 egg
2 T sauerkraut juice or dill pickle juice
2 t. baking powder
2 t. dry mustard
1/2 t. kosher salt
1/2 t. sugar
1/2 t. cayenne
1/4 t. baking soda

Heat 350*F
Peanut of vegetable oil, 3" deep

Stuff with and Fry; Serve With:
24 cubes Swiss Cheese (1/2" chunks)
1000 Island Dressing

Combine all ingredients (except oil, cheese and dressing) in a bowl. Cover and chill for 15 minutes.
Heat oil to 350*F in a saucepan over medium oil must be about 3" deep).
Stuff a cube of cheese into 1 Tablespoon of batter. Fry in oil in batches until brown, crisp, and cooked through, 3-4 minutes, turning often; drain on paper towels. Servie with dressing for dipping.
