Any Ideas
right now i'm thinking:
Lipton noodle/rice
Bagged Chicken/tuna
Oatmeal
Peanut Butter & Crackers
Fresh Fruit & Veggies

I enjoy eating but have no real Idea on what to take. I usually get MRE's when the navy sends us into the field, but don't really like them.

Those are pretty good choices. Fresh fruit and veggies won't last long, but for a short trip there's no reason you shouldn't take them, other than they're heavy.

If you really like peanut butter, pick up some Skippy squeezers. I take them and pita bread, squeeze the PB into the pita pocket, and eat it. Yum. The Skippy squeezers are good straight up too.

Look into Enertia meals. They're usually pretty good.

Gorp, the packaged crackers, with either cheese or peanut butter, and some sort of energy bar. I prefer Clif and Balance bars. If you're used to the taste of candy bars, Clif and Balance can be a little, well, boring. Granola bars are good too, I like the Quaker Chewy granola bars, and they don't melt as bad as a chocolate-based bar will.

I do a lot of my shopping at Trader Joe's for backpacking:
Fruit leather
chocolate bars
oatmeal with dried fruit in it
the PB tubes of course
pudding in tubes or cups
I take a block of Kraft 'Cracker Stackers' swiss cheese (precut)
tortillas or flat bread
for dinners i sometimes make burritos with instant rice and beans (rehydrate in freezer quart bags, no mess) add in some cheese and salsa (either dehydrated or use packets from McDonalds)
i also do couscous dishes in freezer bags.
i love Idahoian brand mashed potatoes (they come in 6 flavors now)
We have a white trash mega food store out west called "WinCo" that has the hugest selection of bulk items, I just cruise thru and get little bags of whatever looks nummy.
I carry tea bags, coffee singles, hot cocoa, apple cider and Crystal Light (I carry a 2cnd bladder to make it in. I drink the whole bladder every night in camp with my kid, to make sure we are hydrated).
I usually pick up a bagel for the first days lunch and the next days lunch.
At Albertson's stores out here I can find shelf stable cream cheese in 3 flavors for 50 cents each :-D
I am really bad at grabbing a handful of packets whenever I am at a fast food place of condiments like salsa, jelly, honey, parmesan cheese, etc.

I like instant potatoes. Requires half the water of noodles and rice and doesn't have to simmer. Little coffee bags are great. The person who invents tea bags for beer will be a zillionaire.

Where can somebody get authentic MREs legitimately, instead of the knock-offs?

If nowhere, how about some real good knock-off MREs?

Actually your list is what I usually take... however the precook sausage is a good additive and if your going out only 2 nites you can even take along some fresh veggies to add to your food..like potatoes, peppers and onions even squash...which I have cooked with the sausage and olive oil I carryin a little squeeze bottle in my pot. It's very good.

MRE
I have several friends in the Nat'l Guard and reserves, they are issued MRE's on the weekend duty, they never eat them. They save them for me for use with my scout troop

I like to bring lemonade powder too. I put just enough in the water to sweeten it up.

I like to hike with hummus and pita bread. I like pasta, so I can live on the cup of noodles forever. I have pretzels for snacks.

If it's a low elevation or flat hike, I take everything but the kitchen sink.

Carrots are good trail food. They have one of the highest glycemic indexes, travel well, and are cheap.

Cream tangerine and montelimar,
A ginger sling with a pineapple heart,
A coffee dessert, yes you know it’s good news,
But you’ll have to have them all pulled out after the savoy truffle.
