We're less than a month away...
...so let's start with a few guidelines and although some may have a few axes to grind (or a few throats to cut), we will try to not cloud this with lots of complications.
Remember these guidelines are a starting point and open to amending from the general populice here...


1. The cook-off will be held on Saturday, July 17th, 2004 Time: TBA

2. Your choice of dish need not be pre-announced

3. Your method of cooking is strictly up to you

4. Desserts, side dishes and the like are welcome as are entrees*

* Note that traditionally, entrees may get more attention by nature and may increase your chances of winning the contest, but the choice is arbitrary

5. All entries will be coordinated to be presented at one uniform time

6. Harrassment of last year's champion, or sabotage of his entry this year is strictly prohibited without the expressed, written consent of the commissioner

Well, I think this should be a pretty freewheeling thing like last year, except with a few modifications so I don't get verbally lynched again by the 'Phildelphia Food Fighters Freestyle Lamb Chop Ring'!

But, the truth is, there's no need to impose a lot of restrictions. We are all pretty much relegated to BBQing. So, the method is all going to be similar. The food you bring is arbitrary. The only other real detailsis how you prepare. So, carry in what you need and do your stuff!

I'll try to think of something exotic to cook. Is it backpacking food or anything that can be transported in a cooler and cooked on a Coleman?

However, Geobeet has informed me that he'll be bringing along Salvatore and Vinny (from Two Street) to keep the New York "slow cook" contingency from straying too far from the rules.

Mini trip report.
About the caribou.

I'd had it with sitting and correcting and had another question for Customs to which I'd never received an answer from their website and so I decided to drive down to the border.

I got to Customs, rode up to the Office door and started to get out when I noticed the Customs Officer step down from his kiosque with his hand on his pistol.

Now, I want to die in the snow or my classroom (... and now for my last trick...), not at the foot of some Customs office door and I decided to drive up to the kiosque.

'I'd like to ask a couple of questions inside.' I said.

'Ask me.' he replied.

Oooooooookay.

(All the guys that have known me for the last twenty-five years are retiring and the young ones are pretty careful - as well must they be in this new brave new world.)

I asked about bringing caribou over the border and was told that the border was closed only to beef. The problem is that caribou is indistinguishable from lean beef in both appearance and taste. He went inside to ask and told me there would be no problem as long as it was less than fifty pounds.

Question number two was about freeze dried beef. You can't get single portions up here (perhaps a difference in the sexual habits between our two societies - and why are snafu and I still single?). Both Enertia and Mountain House have a good selection of single servings. I wanted to know if I could bring back across the U.S. border beef I had ordered from the States , clearly marked 'product of the U.S.A. and unopened.

No problem I was told.

All in all apositive experience, particularly as I'm still alive.

Now, do I cook for two? What's the drill?
