Whats your favorite backcountry meal

I would have to say backcountry Fettucini Alfredo made with dehydrated milk and Crisco instead of cream and butter. Although I am considering buying a dehydrator so i can experiment with a backcountry jambalaya.

I'm pretty fond of Dicentra's Annie's pasta in a box creations. Last time it was Annie's shells and alfredo with smoked salmon and dehydrated corn. It was delicious.

In fact, I like Annie's so well, I made shells and white cheddar for dinner last night with tuna and green beans.

Must always have wine and chocolate though!

Why not? Annie's is available all over the US. Cook it up, drain the water, add the powdered cheese mix and a foil packet of your choice of protein.

Next I'm going to try Lipton's alfredo noodles with the new fangled foil packs of clams and shrimp. Seafood alfredo in the backcountry! Woo Hoo!

Fishing is easy. Trips are more fun when the food is waiting for you out there!

One of my favorites is my "Trail Stew".

It would be easy to dehydrate teh whole thing at home, but I choose to dehydrate the items, then combine on the trail.

It has all of the common items, all dried out:

Stew Beef, cooked and seasoned
Carrots
Celery
Pearl Onions
Peas
Corn
Half a packet of Stew mix
Water
And the secret - multiple splashes of 3 buck Chuck.

As luck would have it, I stumbled onto a great trail meal when I was looking through the fridge last night.

I'll have to keep that one to myself, just incase I enter the TC competition!

Yup. Good stuff!

My dinners vary. I love cooking for people and we always eat really well. The salmon/corn/pasta dish was excellent! :)

This last trip was Phad Thai and Ginger-Curry Cous Cous YUM! I want to try to make a trail version of coconut curry next...

this last trip....cream of asparagus.
Maggi makes a dehydrated soup, one little pack makes one quart. I had a "bowlfull" everyday...just poured out enough for a cup or two and added hot water...stir...mmmm..i like me some asparagus soup.

I'm in the process of dehydrating a tomato pesto spaghetti sauce with some small "mezzaluna" type of ravioli that I bought from Trader Joe's by my house... The raviolis were dry to begin with and have a squash/parmesan stuffing, so I had to cook them and add them to the spaghetti sauce... This will be interesting!

Has anyone else dehydrated little raviolis before? (these were about the size of a penny before cooking and a quarter after cooking...) It sure smells good. Hopefully, it will rehydrate well!

I got somw smoked salmon jerky a little while ago. Next time I'm up in the Smokies I'm going to experiment with it. Maybe something alfredo-like.

I try not to cook. I used to sleep out, but now I usually just hike thru. I couldn't do the appalachian trail like this, but could in sections. 99% of the Catskills & Adirondacks I can hike in & out of in a day. I like hiking at night & my pack is considerably lighter & smaller. I do gen still pack the kitchen sink & bring enough gear to make it thru the night under adverse conditions if need be. I don't like to cook. I don't like the mess & I don't like to clean. I will waste time filtering water. I'll eat (non-choc)energy bars, solid white tuna. I've tried the solid white chicken but it tastes like tuna to me & more $$$. My all-time favorite is London broil. I cook it on the BBQ then cut it into slices & cook it some more. Salt it & bag it. Love it. I tried summer sausage that a state ag & market inspector told me would keep a few days in summer but don't feel comfortable with it. I'll bring fruit, crackers & cheddar cheese is always good. Like trail mixes.

Pink - I've used those in "Q's famous trail side pasta".

I used the ones stuffed with cheeeeeeese! I cooked them up, then in the pot, used the water I boiled them up in to rehydrate the homemade sause.

I also use insulated envelops that help with cooking.

Fettucini alfredo is good, especially with some turkey sausage and veggies :)

My last meal in the backcountry was pancakes that hikerduane made topped with his homemade strawberry preserves - yum!

Jambalaya is my all time favorite. Shrimp, sauage, etc. I make it and dehydrate it at home. No one has kissed my blistered foot, YET, but darn close.

I'll ditto fresh trout.

Hookers on the trail? I never se them. Usually I never see anyone else. The only fish smell I get come from the fresh trout.

Problem is my hubby can't eat any onions or he'd be very bad shape... most of the instant stuff has onions in them... :-(
