HooRay for soup!
Fall is the perfect time for hot creamy soup! (Pixie would agree with me here) Anyone else love soup? What kind?

I had leftover cauliflower from the party the other night... So what can you make with that? SOUP!

Curry-Ginger Potato-Cauliflower soup. Pureed with the Imersion blender. Thick yummy goodness! :)

I had a gigantic bowl of chicken soup at our excellent local Mexican restaurant last week. It was way too much, so I took half of it home, then had it for lunch the next day - YUM! Today I had leftover homemade chili, which is kinda like soup....

twigeater, I tried the Italian Wedding soup in Costco. It tastes like chicken soup with small meatballs and some spinach leaves with tiny pasta. A lot of soups have a chicken soup base.

For the soup, you can use the canned chicken soup broth or make your own by using a whole chicken or parts then add carrots, celery, onion, salt, maybe a bay leaf. Italians use some tomato paste. I also like to add a piece of boullion from Lipton Soup mix.

After the soup is done, take out the chicken. You can use that for chicken salad. Then I would puree the carrots and celery and onion into the soup with a blender.

Meatballs are a personal thing that you make to taste, but here is how I make mine. To every pound of chopmeat, I add one egg, 1 cup seasoned Italian breadcrumbs , 1 tbl.
parsley flakes, 1/2 cup grated cheese (romano), salt, pepper and sometimes some sauteed (carmelized) onion.

*Also, I almost forgot, I add maybe 3 slices of wet bread or a roll or two that has been squeezed of excess water, but not totally. This makes the meatballs come out soft. You can even add some water to the breadcrumbs before you add them to the chopmeat mixture.

You can make the meatballs and just throw them in the soup for about 10 minutes, but for a better flavor, fry them in oil until brown, then add to soup. When you add them, add as much spinach as you would like.

Cook the pasta on the side, drain, and add as much soup to the pasta as is required, keeping the extra soup separate so if you need to use the soup again, the pasta is not in it, because if it is, the pasta will overcook when you reheat it on another day.

Tomatoe Florentine sounds good. Florentine means spinach.

My specialties are Andalusian gazpacho, Sze-Tchouan hot and sour soup amd Mexican corn chowder ...

BUT ...

Autumn makes me yearn for comfort food that goes with deer hunting and backpacking and coming in from the cold.

I'm going to make butternut squash soup really soon.

My brother-in-law's father (Austrian) who had served in the Gebirgsjägerregiment of the 2nd Sturmdivision said that the only two animals he never succeeded in eating - even in post-war Austria - were crow and fox.
