If you cook like this mmmmmmmm You gotta be married.” 7:54:59 AM 2/12/05 Pumpkin Cheesecake “Pumpkin Cheesecake Ingredients: Crust: 2 1/3 C graham cracker crumbs 2/3 C butter or margarine, softened 1/3 C sugar Filling: 5 8oz. packages (40 total oz.) cream cheese, softened 1/2 C light brown sugar, packed 3/4 C sugar 3 T flour 1/2 t salt 1 t vanilla 3/4 t ground allspice (I substitute pumpkin pie spice) 3/4 t ground ginger 1/2 t ground cinnamon 6 eggs 1 16oz. can pumpkin 1 5oz. can evaporated milk Instructions: Mix graham cracker crumbs, butter or margarine, and 1/3 cup sugar. Press into bottom and sides of springform pan. Set aside. Preheat oven to 350F. In a large bowl, with mixer at low speed, beat cream cheese until smooth. Add remaining ingredients, beating well after each egg. Increase speed to medium and beat 5 minutes, occasionally scraping the bowl with a rubber spatula. Pour cheese mixture into pan. Bake 1 hour. Turn off oven, and let cheesecake remain for 30 minutes. Cool on wire rack, cover, and refrigerate.
