OK cooks, what’s your one dish you are famous for being at? Top 5?

Mines probably my:
Lasagna
Stuffed baked onions (half credit because it’s Strider’s recipe)
Broccoli stuffed pasta shells
Scrapple (1/2 credit to Phil)
Steak

I make a mean pepper steak. My ribs are my specialty, though. I won cook-off #1 with them. And I may have to do it again for #3, being that some of these TT loudmouths haven't tasted them yet. Nothing like shuttin' someone up by sticking a rib in their mouth!

That said, I also have developed a sesame chicken and steak teriyaki that kicks ass. Those are recent...

Well, lessee...

My wife loves my chicken and dumplings.
My son loves my red beans and rice, except he calls it red rice and beans.
My daughter likes my pancakes and sausage.
The rest of my family loves it when I do Mexican night. My brother especially likes the way I make the refried beans.

Oh I forgot about my ribs!

I like to cut them into individual ribs and then rub them down real good and let them sit for 2-3 days. Then I put them in a dutch oven with half the bbq sauce and a can of beer. Then when they're done I serve them with fresh hot bbq sauce. the beer gives it this wonderful yeasty taste and smell and makes them extra sweet.

Lessee, I got some leftover chicken and dumplings in the fridge right now. They're only about, um, two weeks old? They oughta be just about right. I think I need to taste them to see if they're still good.

Is that some kind of Yankee thing? I have seen ketchup put on a lot of things, but never chicken and dumplings. Mine are more like a thick soup anyway, so you'd be mixing it in, lol...

It took me years to get my sister-in-law to stop putting ketchup on steak.

Let me not forget steak au poivre if I'm spelling it right. It's steak with a peppercorn sauce w/brandy and you can add cream too if you like.

Hmm... this is a tough question.
I'm with Lipstick on this-- pretty much everything I cook comes out well-- learned by watching my mom and just experimenting with recipes. (I consider recipes as "guidelines" on how to make a dish... unless, of course, it's a baked good (cookies, cakes, etc.) Then, I follow the recipes due to the chemistry of baked goods.)

will have to come up with my list later... :-)

pink, I agree. I have no recipes, but baked goods tend to be measured. My poor in law came to visit and tried my linguine carbonara. She went home and cooked it for her family and it came out dry w/the linguine stuck together. I guess I made it look easy, but non cooks don't realize there is a trick to everything you make, and it's not always how you start, but how you finish. Some of the most important parts of cooking come at the end.

Thanksgiving Cajun Smoked Turkey. Of course, the only real work I do is brine the thing for 48 hours and turn the turkey in the smoker every 2 hours.

Venison Stew
I had to experiment with the meat a couple of times until I finally figured out how to do it "just right." Those of you who have cooked venison probably know how difficult it is to cook it correctly.

Now I get friends bringing me big chunks of venison to make them a pot of it. I made a couple pots for a Super Bowl party and it went over bigtime.

there, that's 5! i'm a cookaholic, i read food/cooking magazines like they're going out of style. sometimes things i make don't always work out, though...like i made this stuffed-bread thing to take over to my friends' house last weekend, and i made it exactly how i always do, except i put rosemary in with the veggies/cheese mixture i stuff the bread with. i think it clashed with something in there (prolly the broccoli), because it tasted like complete crap! i mean the whole stuffing part was really wretched.

Tarpy makes good Italian food...in fact, mostly everything he makes is Italian, even if it doesn't start out that way. he'll plan on Mexican, and then by the time dinner is ready, it's somehow morphed into Italian. LOL!
