Gem, a great (delish, decadant, never know they aren't as bad for you as the worst, most fattening high calorie brownies in the world) brownie recipe from Cooking light, for you: Bourbon Fudge Brownies (I substitute Baileys for bourbon) 1/4C bourbon 1/4C semisweet choc chips 1 1/2C all-purpose flour 1/2C unsweetened cocoa 1 tsp baking powder 1/2 tsp salt 1 1/3 C sugar 6 tbsp butter, softened 1/2 tsp vanilla extract 2 large cooking spray 1) Preheat oven to 350° 2) Bring bourbon (use hot milk instead if desired) to a boil in a small saucepan, remove from heat and add choc chips, stirring until smooth. 3)Lightly spoon flour into measuring cups and level with knife. Combine flour, cocoa, baking powder and salt, stirring with a whisk. 4) combine butter and sugar in a large bowl, beat at med speed until well combined. Add vanilla and eggs, beat well. Add bourbon mixture and dry mixture and beat at low until just combined. 5) spread in a 9x9 pan coated with cooking spray. Bake at 350° for 25 minutes or until a pick comes out clean (I leave mine alittle gooey). 20 servings. 148 calories, 30% from fat.
