Hey Everyone
Today I had a day off from work, so I did a bunch of stuff on my site. I am in the process of doing a full redo of the look (the look I have right now may be a temp.)

I put out a call today over on BP.com forums, and had two awesome forum users donate 6 months worth of $ so I could pay my premium service/bandwith on my site. I am now good for the next year!
I am hoping that if I can get another donater to step up and chip in a couple more dollars, I am going to buy a real domain name for it.(this site has been paid for by pure donations! :-) )
I am $3 bucks away..sigh! ;-)

Anyhoo, I put up new recipes also today too :-)

I did a major overhaul last night....and it should look somewhat like that for the next week or so, till I figure out what else I want to do (I had to get rid of my cheezy template I was using...so I am using a relatively boring background right now)
Hopefully I will have my domain name soon too :-)

For the footballpalooza trip I had:

First Day dinner: Creamy chicken and rice (it came out ok, but the taste was a little flat...I think some Emeril's southwest seasoning would have put some zip in it)

Second day breakfast: Oatmeal with dried fruit (nothing really new here, but it did provide a nice variation from the same old flavors straight from the box).

Second day lunch: Well, this was the old stand by with tuna and tortillas. Nothing new on this one.

Second day dinner: Seafood chowder (straight from the recipe...this was the best meal I ever had on the trail...it was great!)

Third day breakfast: Cereal (bran and yogurt with powdered milk....a nice break from oats or grits)

Third day lunch: Ramen Salad with pepperoni (found the salad dressing in packets at Walmart...this was really good and very different than what I would usually take....a real keeper)

Third day dinner: Chicken and Dressing with gravy (I had used stovetop before, but, duh, never thought to add the powdered gravy...it made a real difference...very good)

Fourth day breakfast: Instant potatoes with bacon bits on tortillas (found the real bacon in little packages, already diced up, in the salad section of Wally world....very, very good)


Thanks for the great ideas. I was continually impressed. More than anything, it made me think about my meals and actually plan them out in advance. The variety was a very welcome relief.

Is the Ramen Salad deal on the web site?

I have made something with bulgar before that was good. I was into cold food a while back, things that didn't require a stove or fuel. I am off that kick now, but some of the food was tasty.

Yes, it is on the website, under the "salad" section I think.

Basically crushed Ramen with dried vegetables (I used salad topping), discard the seasoning pack. Rehydrate, drain the water, add the pepperoni and salad dressing.

Cold meal but really tasty. No need to crack out the stove when stopping on the side of the trail with this one.

Yes, doing cold ramen is very easy. You just soak the ramen (and you can leave it whole) in cold water. It is pre cooked, so no heat needed.
In a quart bag just add 1 1/2 cups or so of water.
Then drain, and toss with dressing and meat or cheese.
And yes, it is on my site :-) In salads....in the cookbook I am writing I will be adding quite a number of cold "salads" that do not require cooking.
Also, couscous does not need to be cooked, just soaked in the proper amount of cold water.

Stove, I bought dehydrated mixed veggies from Wild Oats but Krogers carries some brand in the spice section. Also look in the salad dressing aisle.
I did find the packets of ranch dressing in a Super Wal Mart

Some store down there has to carry dried mixed veggies. Heck just buy a couple of cans of mixed veggies and dehydrate them yourself.

My wife has a gf that feeds her baby daughter dehydrated veggies all day like popcorn/candy. The kid loves the stuff. I can ask her where she gets the stuff. Prolly at Trader Joes, Woodmans, or Whole Foods.

I drove over to Mobile after work today and found a Fresh Foods store.
I think it's pretty much like a Whole Foods.

Found Veggie Flakes and a bunch of other goodies. High energy trial mix, real granola, etc. Still didn't find any Knorr Leek soup mix.

Nice store, but full of yuppies and the worse behaved kids I've ever seen in a store.

I made up two or three meals from your website, sarbar.
I put all the dry stuff for a meal into a Vacuum Sealer bag and sealed it up.

I used to do my meals in baggies like that, then I found I enjoyed creating when I got to camp. I mean, when I'm packing, seafood chowder might sound good, but is that what I'm gonna want on the trail?
But then again, I've never been a "pre packaged meal" person.

So I carry little baggies of "add mes," a bunch of bases, and some other stuff to mix in depending on what I feel like eating at that moment. I'm getting hungry just thinking about it. :)

Lol, I remember when my mom and I went to Kroger with her friend Nancy, her 2 kids George and Erika. and Neil, a friend of George's. Not 15 minutes into shopping the manager came on the intercom to ask Nancy to come get her son, his friend, and escort them from the store. For good. I can't remember what they did but it must have been a doozie.

I did see some and bought some from Ingles in Bryson City, NC, recently.

I can no longer find any Knorr Tomato Beef w/Ox Tail soup. I even tried special orders at Publix in Florida and at Ingles in North Carolina but neither store could obtain it from their distributors.

Patrick..the veggies you saw at REI are the ones made by Justtomatoes-and yes, if you order from their website, you can buy in many sizes-which get a lot cheaper as you go bigger. But even then..if you make freezerbag meals like I do, a small bag from REI lasts quite awhile (I only use 1/4 cup or so per meal). Then again, I eat the stuff like candy....I am odd ;-)

I am an electic cook..I like recipes to give me ideas and then I branch off, and create it into a concept that fits my taste ;-) The whole point behind the website and the recipes..was that as a backpacker, I saw how most outdoorsy people would go blank on what to eat when out and about...you see so many newbies who think they have to eat freeze dried meals-they do not know any better. They have no idea what to bring, or what to make. If you look at the site with an electic eye, you see that one could easily bring staples, and make different ideas-using the concepts :-) (Which is pretty much how I come up with new recipes..lol!)
As for the book I am writing, my manuscript is almost done-with at least 100 new recipes not on my site..woo-hoo!!

Btw..nice food vac'ing ;-)

Has anyone done tortellini (the dried kind in a bag)in a freezer bag? This past weekend I was out and took some ricotta & spinach tortellini, added some olive oil & garlic, then some salmon. Topped it with some grated parmesan cheese. Good stuff but, I didn't know if it would cook enough in a bag or if it needed to boil longer?

Last winter on a large outing we did a pasta feed..I took my pasta (the refrigrated kind) boiled it in water, drained it then dumped it into a freezer bag, and combined it with the sauce (which was in a vinyl pouch that we had heated up in a cup of boiling water). No mess! No cleanup!
Tortellini does need a lot of cooking for the dried ones-the refrigrated ones need a quick boil.

I bought some of the fruits, but havent' tried making anything from them yet.

But, if they rehydrate as well as the veggies, I think I will be finding a way to make cobbler out of the "instant" bisquick (just add water--they come in little foil packs and you can make about 6 biscuits)...

SS, nice setup on your sealed meal. I have a vacuum sealer also but noticed I had some problems with the seal not holding. Have you had that problem?

I have had that happen also. I have started back using freezer bags. Seems I get more of them than I do in the roll of vacuum bags. The individual vacuum bags are priced sky high

I like "Just Veggies" too, but have also dried my own veggies with success. They don't look at pretty, but they seem to rehydrate just fine and hold up well when cooked.

They taste delicious..especially the raspberries. The cherries are VERY tart!

Hey guys, Walmart is carrying their own brand of vac bags now....who knows how well they will handle, but they are cheaper.

Now fer me....my favorite freezer bags are from Dollar Tree...the elusive hard to find stand up freezer bags (the other styles they carry are krappy!!) Theya re clear, very thick and have a blue zipper. If you find them, snatch them up!!
