MarkO, regarding the lump charcoal, you should reaaly try wood instead of the lump charcoal one time. It's even better ;)

Personally i prefer beech wood. Just be sure to let it dry for 2 years on the stack before using it for schwenking. that should get the water down to 10% or such inside the wood. you can use fresher wood if you like a more smoky flavor.
