Beer Can Chicken??

I swear that every time I make it, the result is better than the time before...and it started out real good. Get a chicken, kill it, pluck, gut, etc. Wash the inside and sear the outer carcass to eliminate those pesky little pin feathers. Fire up the grill. Assuming, of course, that you bought a 12 pack of cheap swill for the occasion, drink half of one can and another three. Inside the can deposit some of your favorite spices, garlic, rosemary, whatever. Rub the dry herbs of your choice over the outside of the chicken. Have a couple more beers. Throw some hickory chips on the grill, preferably after they been soaking in water (or beer) for a couple of hours. Place the chicken onto the can from the neck end (you could try the butt end, but it's a little too tight...ask MarkO) and set the can on the grill. Place the can and the chicken on the grill and close the lid. Drink a couple more beers and wait half an hour, open the lid, close it and drink a couple more beers. In another half hour to one hour the chicken will be done. Moist, flavorful and fallinf off the bone. A very delicious feast. Drink a couple more beers.

Oops - forgot to mention that I don't buy beer in cans, so I always have to use a soda can and fill it about 2/3 full with whatever bottled beer I have on hand. Sunday's was Sierra Nevada Pale Ale.

Hehe, the first the I did beer can chicken I bought this cheap wire contraption to hold the beer can up keep the chicken stable. It was like 2 bucks... but I was dumb and thought that the point of the beer can was to cook the chicken upright so I just put the chicken on the wire frame and cooked it. It was good, like any roasted chicken, but I basically didn't see the point... I mean I could have just roasted it in a pan or put it on the rotisserie.

Silly me. I figured it out before I cooked the second one. I still use that wire stand thingy. Works great on the grill but I am betting it's optional.

dude! I'm gonna cook me a beer can chicken this weekend. I'm bored with all of my usual recipes. I'll have to settle for a soda can as well.

If you soak the hickory chips in beer for 3 days, they make an excellent side dish. Providing, of course, you strictly follow my directions in preparing and cooking the chicken.

If you pour out or drink about 1/4 the can of beer (I usually ditch it because I start with warm beer for beer can chicken) and then pour Italian dressing in the beer can, you will pick up a nice flavor.

I just use the cheapest Italian I can find, shake it well and pour it in the can. Once it heats up and starts to fizz, any separation problems are pretty much moot.

And it may be a psychological thing, but I have found Budweiser works the best with beer can chicken. I wonder if it is the Beech wood aging?

I'm gonna put two chickens on the grill this weekend and try the Italian Dressing deal...hope it turns out good. Do I need to add water to the can too??
