My usual preference is pulled pork BBQ, but once in a while I go for the smoked beef brisket. Yummers... sounds a s--tload better than dinner tonight.

It depends on the cut. I'm married to a meat cutter!
Go for ribs if your wanting pork. You have to boil it first in beer, water and spices. Then put it on the grill and add sauce at the end. Yummm! It'll fall right of the bone.
If steak is your thing, I go for Rib Eye. Marinate in a beer, a few spices and make sure to NOT overcook it. I think that's what we're having tonight. Yummm, I'm hungery

I smoke a lot of pork. Wood from nut trees smoke well, and also the wood from fruit trees. Nut and fruit wood are kind of mellow. I live on 8 acres and have lots of hickory trees. I use hickory a lot too.

Two....two steaks in one! On one side of the bone you have a New York and on the other side you have a Filet Mignon 8)

Hard to beat slow-cooked beef or pork ribs (with wood chips, of course), or a good rib-eye or porterhouse steak...don't make me decide!

i think pork lends itself better to slow bbq cooking as long as you don't over cook it...beef is a little more forgivin in that respect...i usually cook my beef using a wet method, either in a crock pot or roasting pan w/ liquid in the oven...although i usually finish beef on the grill

Pork fer ribs. But nothing is as good as a nice brisket. I always get ribs w/ a side of Brisket. Birch eats all the chicken.

It depends on the kind of preparation and the place.

At the nearest great BBQ place, it's mostly beef: Ribs, Burnt Ends, Brisket. I especially love Texas style Ribs and Brisket.

I love good pork ribs, but I usually find pulled pork to be boring - but there have been a few times when I had some I loved. At some places, pork ribs have been what I order most. I was quite dissapointed in the pulled pork I had the last time I wa in North Carolina.

You gotta give that pork shoulder a good rub first. If you just smoke it, it won't be nearly as good.

INGREDIENTS:

1/4 cup black pepper
1/4 cup paprika
3 tablespoons sugar
2 tablespoons salt
2 teaspoons dry mustard
2 teaspoons cayenne

PREPARATION:

Mix all ingredients. Work 1/2 half mixture into meat 12-24 hours before cooking. Apply remaining rub before smoking.


That looks like a pretty good rub.

I also prepare a spicy vinegar sauce to apply to the meat just before eating. I usually mix up about a tablespoon of chili powder, half-cup of vinegar, half-teaspoon of salt, maybe a little pepper, and about a tablespoon of hot sauce, then cut it with a a little water. Mix that up real good and apply it to the pulled pork. Yum!

A lot of pulled pork is bland until you put some kind of sauce on it. Some people like a tomato-y BBQ sauce. I think that's defiling good pulled pork, but it can be really good on ribs or brisket.

Chopped pork bbq, North Carolina style, with a vinegar base instead of tomatoe, topped with cole slaw. Hush puppies on the side and green beans that have cooked all day with a big slab of bacon. Ok, now I am hungary.

I did 3 racks of pork ribs for a Super Bowl party. I must say, they rocked the house.

I already had a rack of spare ribs for the party and hit the grocery store that Sat morning for 1-2 more. I get there and they had baby backs about 60% off. I bought 4 racks and froze two for late. It was a chore getting the 3 racks on the smoker, but 4.5 hrs later they were awesome.

I tried to find a way to work the word "rack" into my post a few more times but ran out of ways. Oh well.

Pork and beef briskets slow cooked are excellent.

Lately, I have been passing over the short rack or rack of beef for boneless pork shoulder-style ribs. Boneless, very juicy, boiled for 30-40 mins and then grilled for 15. Succulent.
