So I got a crockpot for Christmas, but I don't really know what to make with it. The recipe book that came with it was basically all red meat stuff, which I don't eat.

Anyone have any good recipes/ideas for vegetarian dishes or ones with chicken or fish? Hmm, actually I wonder if you even make fish in that...although the idea of the whole house smelling of fish for 8 straight hours is tempting!! haha.

My mom has given me a pile of crockpot cookbooks, most of which are old and also red meat. The new cookbooks she has have many more vegetarian, fish and chicken recipes in them. Try googling recipes for it, or hit the bookstore.

Do you like ham? One of my favorites is a chowder made w/ cream of celery soup, diced ham, corn, cubed potato and spices. Yum.

Any of the tougher cuts of meat are great for a crockpot, but one of my son's favorites is cheap and easy (like me) so we make it all the time: turkey legs. Throw them in the pot with some water or stock, add some onions and maybe carrots or celery, salt and pepper.

NC, do you pull the tendons out first or eat around them? Turkey leg tendons have always bothered me.

so turkey legs do well b/c they're tough? does that mean you don't want to cook something not-so-tough, like chicken breasts? would that make them tougher or something?

My favorite is 15 bean soup. Soak the beans overnight and rinse them in the morning. Put in the crock and add enough liquid to cover. Cook on low all day. I like to add some diced tomatoes, onion and ham. Oh, and don't forget your Beano!

white beans and hamhocks cooked all day. Then you serve them up with Mexican cornbread and hot chow chow.

You can also slow cook green beans with ham.

white chicken chili is good. Navy beans, chicken, chili peppers, and other stuff. You serve it with that white mexican cheese (can't recall the name) and corn chips.

Any cut of meat is fine because you're cooking low and slow, but the tougher, cheaper cuts are perfect for this type of cooking. It's one of the best ways to save a few pennies on meat. But like I said, any cut of meat will be fine.

make veggie soup, cabbage soup, lots of bean soup recipies.

I LOVE chicken in the crock pot. Comes out so juicy and tender, it practically melts in your mouth. I made Chicken Parmasan last week that was quite good. I also do salsa chicken - a few chicken breasts, a jar of salsa, cook on low all day. Shred the chicken, and you have stuff for chicken tacos, or I put it on a salad sometimes.

I'm looking through my crock pot cookbook right now (Fix It and Forget It). There's:

Chicken in Wine
Chicken and Veggies
Cranberry Chicken
Sweet and Sour Chicken
Herb-Potato Fish Bake
Seafood Gumbo
Jambalaya
Tuna BBQ
Mac and Cheese
3 million Bean recipies

I just googled Crock Pot Recipies and got a bazillion sites. Or, buy a big crock pot cookbook. There's a TON of things you can do with a crock pot!

I often made pasta sauce in the crock-pot. I don't have a recipe, besides starting with crushed tomatoes and tomato paste, mixed with Italian spices. I mix everything together and set it on low before I leave for work. When I get home I boil my pasta and add the sauce.

well actually i asked for it, HOI! i like having every imaginable kitchen thingy, just in case. LOL! although speaking of regifting, that did come in pretty handy with a couple of presents. mooohaha.

mac & cheese, that is a good idea, smiley!! and that shredded chicken thing was exactly what i was thinking of when i posted this thread...i remembered someone had posted that before and it sounded good. why do i need to buy a cookbook, that's what you people are for.

I just made some 15 bean soup in a crock pot, but alas, no beano. Good thing I'm single, but it sure was good. Yum! (burp, fart).

You're just chicken, Lyra!

Ain't chew never seed oxtails???

They are merely tails of cattle cut into vertebrae sections and are used to make soup.

The bits of meat in the tails are exquisite and quite tasty!!

There is just enough fat and gelatin to make fine soup.

The sections vary in size........since the tail has a taper to it.

I reckon some of the southerners here abouts know WTF I'm talkin' about.

5 pounds stew beef cut into 1 1/2" cubes
1/2 cup flour
3 beef bouillon cubes, crushed
1/2 tsp pepper
2 cups onions -- sliced
2 garlic cloves -- minced
1/2 cup beef broth
3/4 cup apple juice
2 Tbs vinegar
1 tsp thyme
1 tsp curry

Apple Dumplings

1 cup applesauce
2 eggs, well beaten
2 tsp parsley, chopped
2 cups flour
2 tsp baking powder
1 tsp salt

Coat meat with mixture of flour, salt and pepper. Combine meat, onion, garlic, beef broth, apple juice, vinegar, thyme and curry in crockpot. Cover and cook on auto 7 hours; or high 4 to 5 hours; or low 8 to 10 hours. Remove cover and place tablespoons of dumpling batter on top of stew. Cover and cook on high for 20 minutes.

To make dumpling batter, blend applesauce with eggs and parsley; add flour, baking powder and salt and beat into egg mixture.

2 pound beef, roast
2 teaspoon black pepper
2 each garlic, cloves, minced
2 each onion soup mix, package
2 teaspoon worcestershire sauce
1 teaspoon steak sauce
3 each carrots, sliced
2 each celery, stalks, diced
1 each bell pepper, green, chopped
1 each onion, yellow
1/2 cup water
1/2 cup tomato juice


Directions:


Cut beef roast into serving-sized portions. Use more beef if you need more than 6 servings. Brown beef in a bit of vegetable oil, although you can skip this step if rushed for time.

Slice onion and separate into rings. Dice the peeled carrots, dice the celery and slice the peppers into thin strips or circles. Place these into bottom of crockpot. Sprinkle the beef pieces with fresh ground black pepper, minced garlic and the onion soup mix. Place on top of the vegetables.

Mix the steak sauce and worcestershire sauce in a small bowl with about 1/2 cup water and 1/2 cup tomato juice. Pour this over the meat.

Turn the crockpot to High for 30 minutes, or, if you're in a hurry, skip this step. Turn to Low, cover and cook for 7-9 hours.

Keep the crockpot covered as much as possible throughout cooking time. A crockpot can be used to cook this type of meal for a varied amount of time, depending on your schedule. It is not important that you take the meat and vegetables out at a specific amount of time. One or two hours either way usually makes no difference.

When ready to serve, dip meat and vegetables out of pot with a slotted spoon. Use the liquid as is or turn crockpot to High and thicken liquid with a little flour or cornstarch.

1 package stew beef (or your favorite type, cut into cubes or strips)
1 can cream of mushroom soup
1 onion, chopped
1 beef boullion cube
1 cup water
1 8 ounce container sour cream
salt, pepper and paprika
PREPARATION:

Combine all ingrediants, except sour cream, salt, pepper and paprika, in a slow cooker. Cook for several hours. (I usually let it cook for 6 hrs. on medium)
Before serving, add sour cream, salt, pepper and paprika, to taste.

If you want it a little thicker, you can mix some flour or cornstarch with water and add it to the mixture to thicken it. Serve over rice or noodles.

1-2 pounds beef stew meat
1 can Campbell's Cream of Mushroom soup (Lowfat/Low Sodium)
1 can Campbell's Golden Mushroom soup
1 can Campbell's French Onion soup
1 package egg noodles, cooked and drained.
PREPARATION:

Place stew meat in slow cooker or Crockpot. (No need to brown first). Combine soups. Pour over meat in slow cooker. Cook in slow cooker 8-10 hours. Serve over cooked and drained egg noodles.

2 to 3 pounds cubed beef
3 to 4 tablespoons flour
1 can chopped tomatoes (any size you desire)
2 carrots, cubed
1 to 2 stalks celery, chopped
1 sliced or chopped onion
1 chopped turnip (optional)



Take some cubed beef, brown it in some flour, then transfer to slow cooker. Add a can of chopped tomatoes, a couple of carrots cubed, celery, onion, one turnip (optional) a little salt and pepper-then add enough water to completely cover all the vegetables and meat.

1 1/2 to 2 pounds ground beef
garlic powder
salt, pepper
5-6 sliced potatoes
1-2 onions,sliced
1-2 onions,sliced
1 can of golden mushroom soup
1/2 cup of water



Brown meat -then add the garlic, salt and pepper.
Place half the potatoes and half of the onions in a greased slow cooker. Then top with beef.

Add remaining potatoes and onion. Then combine water and mushroom soup and spread on top of beef mixture.

Bake on high for 3-4 hours or on low for 8 hours.

2 to 2 1/2 pounds ground chuck
1 can tomato soup, divided
1 egg, slightly beaten
1 cup crushed Ritz crackers
2 tablespoons honey
1 tablespoon plus 2 teaspoons Worcestershire sauce, divided
2 tablespoons dried minced onions
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup water
2 teaspoons prepared mustard
2 tablespoons brown sugar

Combine ground chuck with half of the tomato soup, egg, crackers, honey, 2 teaspoons Worcestershire sauce, onions, salt and pepper. Mix well and form into a ball.

Place a crinkled length of aluminum foil in the crockpot so the ends extend an inch or so out of the pot. Place the meatloaf in the pot, the foil will make it easier to lift the meatloaf out and keep it out of the drippings.

Combine remaining soup, 1 tablespoon Worcestershire sauce, the water, mustard and brown sugar. Whisk together and pour over the meat loaf. Cover and cook on low for 8 to 10 hours.

Serves 4 to 6.

2 1/2 to 3 pound beef chuck steak, cut into small strips or chunks
2 large onions, finely chopped
3 tablespoons grated ginger
6 to 8 cloves garlic
1 teaspoon turmeric
1 teaspoon paprika
2 tablespoons ground cumin
1 tablespoon ground coriander
1 teaspoon cardamom
1/2 teaspoon ground cloves
1/2 teaspoon ground red pepper
1/4 teaspoon ground nutmeg
1 cinnamon stick
1/3 cup tomato paste
2/3 cup water
1/3 cup fresh cilantro
salt to taste

Combine onions, ginger, garlic, cinnamon stick, turmeric and paprika in crockpot.

Coat beef strips with flour and add to crockpot.

Add cumin, coriander, cardamom, cloves, red pepper and nutmeg.

In a small bowl mix tomato paste and water. Add to crockpot. Cook on low for 8 to 9 hours. Stir in cilantro. Add salt to taste.
