What are your favorite recipies? I'm in a baking mood! I want something in the oven...I love this time of year :)

the secret to good oatmeal cookies is to use REAL dark brown sugar... and lots of it. some brown sugar is just white sugar that has been tossed about in molassas. lots of brown sugar gives them that gummy/chewy texture.

Its on my list of things to do friday night after work----

make cookies. they should be cool enough by saturday morning so I can drop them in the mail with some other packages I have to mail off. so you better tell me how you like your cookies SS

Here's my favorite:

Ingredients:
3 stick of salted butter
3 cups of flour
1 1/2 teaspoons of salt
1 1/2 teaspoons of baking soda
1 cup + 2 tablespoons of white sugar
1 cup + 2 tablespoons of FIRMLY PACKED brown sugar
3 medium sized eggs or the equivalent
2 1/4 teaspoons of vanilla extract (the good kind)
1 pound, 8 ounces (24 ounces) of semi-sweet chocolate pieces
3 cups of Old Fashioned Quaker Oats or the equivalent

These cookies are great without nuts, but you might also try 1.5 to 3 cups of chopped walnuts.

Shortening, unsalted butter, or etcetera to grease the cookie sheet. Salted butter will make them taste too salty.

Preheat oven to 350 degrees Fahrenheit.

Bake 8 to 15 minutes depending on the size of the cookies and the actual
average heat of the oven.

A really really good twist on oatmeal cookies is to use jaggery or piloncillo; both are made from unrefined cane syrup, and are incredible. By the way, jaggery is Indian and piloncillo is hispanic.

Sc, I ate your pear applesauce. If the tree makes pears galore again this year and I find a deal on apples again I'll make more, and ship you some for Xmas. You got a good memory Chicka! =)

My favorite cookies bar none are those white chip/cranberry cookies (which happen to have alot of oatmeal in them).

I am going to be trying my hand at making some applesauce and apple butter myself this year-----:)

But I'll probebly freeze it, as I dont have a canner thingy yet.

1-1/4 cups old fashioned rolled oats
3/4 cup AP flour, spooned and leveled
1/2 teaspoon baking powder
1/2 teaspoon salt
8 tablespoons (1 stick) unsalted butter, room temperature
1/2 cup packed light brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
3/4 coarsely chopped apricots
3/4 cup slivered almonds

1. Preheat the oven to 350 degrees. In a medium bowl, whisk oats, flour, baking powder and salt to combine; set aside.

2. With an electric mixer, beat butter and both sugars on medium speed until light and fluffy, beat in egg and vanilla. With mixer on low speed, add oat mixture, and mix just until combined. Fold in apricots and almonds.

3. Divide dough into 12 pieces, and roll into balls. Place balls on baking sheets. Using your fingers, flatten balls to about 3/4 inch thickness.

4. Bake, rotating sheets halfway through, until edges begin to brown, 25-30 minutes. Cool 5 minutes on baking sheets, then transfer cookies to a wire rack to cool completely.

NOTES: I also added 1/2 tsp. almond extract. The cookies were done right at 20 minutes, not 25. Keep an eye on these suckers.

So I took some of these cookies to the vet (Pinky coughed up blood so I had him checked out)and they were all gone before I left. I took 6 to my mom and dad's house; my mom had one, then hid the rest from my dad so she could have them all to herself. That's a glowing endorsement right there.

Mmmm, moving isn't such a bad thing! One of our neighbors just brought us a "welcome to the neighborhood" batch of both chocolate chip AND chocolate fudge oatmeal cookies that are good stuff!

People in the South know how to do things. I take cookies to my new neighbors and they first look like I'm crazy, then grab the cookies and run. lol.
