“Wow, that is a hard diet!! So basically you can't bring any "convenience" foods with you, and would basically have to bring what you eat at home backpacking. Are you able to eat dehydrated foods, have you ever tried that? There are a lot of recipes on this raw-foods diet page that I bet would be good...especially the "burgers" seem like they'd travel well, and give you lots of energy.

That's a firm Southern tradition. Monday's were 'wash day' so they needed something fast and easy to fix. Red Beans and Rice was the ticket.
The work cafeteria serves a pretty good Red Beans and Rice with sausage for lunch every Monday.
