I saw you were contemplating an Ozark Highlands trail hike in Oct. Depending on the weather you can still be in full swing of tick and chigger season in start of Oct. The end of Oct. or begining of Nov. is prime for the harwood leaf colors. Tim Ernst writes about and photographs Ark trails. The OHT guide he publishes is an excellent planning guide for the OHT. How do you do those jalepeno poppers again? I came home with peppers and bacon but forgot the cream cheese. What I remember is you cut open the peppers, get the seeds out, put some cream cheese in them, wrap in bacon, and bake at about 350 until the bacon is cripsy. Do you put it on one of those pans where the grease drains underneath the main cooking surface?

you got it DH. a broiler pan. I guess it would still work the same if you used a reg cookie sheet, but they may be soggy, or stick coming off the pan.

A little tip for you.

Cut the wole pkg of bacon in half and each piece of bacon will make one wrap around the pepper. Use two half-strips per pepper, and you can either use tooth picks as skewers to hold the bacon on, or just be sure the ends are on the bottom of the pepper when you put them on the broiler pan. If they arent, they will tend to straighten out as they cook then they fall off.

These ROCK on the grill too.

Thanks. I'd hoped to have these go with my ball game food for the Bama game tonight. I'm doing grilled Salmon and stir fry squash, zuchini, yellow bell pepper, and cilantro. The poppers would've been good tonight. There are many more games to watch over the next 2 days. I'll grab some cream cheese and give it a try. Oh, I left off the marguiritas tonight as well.

dude.

i want to THANK YOU for the wonderful, wonderful picture book of yosemite... my whole family really dug it but i could stare at the photos for hours... these pics of the climbing legends and their camp sites could have been trailtalk trips! all the old school gear and famous routes (and the people that put them up!) are mostly there. i have never climbed in yosemite but now my appetite to do so has gone over the top thanks to this thoughtful gift. the poem you wrote was, as always, fantastic. it hangs with all our christmas cards. so merry christmas sir and once again thank you... "brother of the hard miles". my love to you and yours.

I knew you'd reallllly enjoy it. So happy to hear that you like it. The cover photo was what inspired the little poem. We've been there, and I was realy moved when I saw it. Not sure it deserves to be hung with the cards, but am humbled to know you think it does.

Funny, you know I almost didn't send that. I thought it was a bit weak. Words rarely, if ever come close to that exhausted high of finishing a realy tough trip.
