HEY....HOWDY and Happy Thanksgiving.....

UM I have a Beef Tenderloin (the high end stuff) to cook....any neat recipies from you guys.....I am usually limited to slow roasting a low end cut but this is REALLY nice.....

Cook it on the grill very slowly and not on the direct flames.Rub it down with garlic and onion powder and it will be GOOOOOD!

XL, cut the tenderloin into 1" thick slices (across the grain) grill for about 5 min per side depending on desired doneness. The key is to let the meat rest 3-5 min before serving, this allows the meat to reabsorb its juices. Season very lightly with salt and pepper adding salt when almost finished to prevent the salt from drwaing too much moisture out.

Mix equal parts sweet cream butter (softened) with and softened bleu chees (stilton is my fav),roll place on wax paper roll into a log and freeze. Before serving steak cut cheese butter mix into thin slices maybe the size of a quarter place one or two one steak, as it melts eat and enjoy. It fantastic and simple as hell.

WHEW thanks Guys.....all I had was "Put in freezer until cold enough to cut, cut into thin slices, season and put in the Dehydrator until it becomes Jerky (LOL)"

Birch, they are wanting it cooked whole...i.e. roast in the oven......I am thinking of rubbing it down with olive oil, seasoning it and putting it in a ROASTING pan or in the Rottisserie until the internal is around 140F....since they like it Rare ish....

Rub the meat lightly with a bit of cinnamon and brown sugar then wrap it with hickory smoked bacon and roast uncovered. The bacon will help keep the meat from drying since tenderloin is so lean. Maybe even throw a few sweet potato chunks in the pan.

Birch....I am at the Family "Compound" in Dallas...put it this way I am the Liberal in this bunch (LOL).

Yeah I have thought about bringing Tilty here just for the fun (LOL).

Well it turns out we have this High Tech CONVECTION oven from HELL that will do the Tenderloin anyway you want. So I have seasoned it and will put it in shortly.

Well using your advice mixed with other advice i rubbed the tenderloin down with olive oil, crusted it with Thyme, pepper, garlic and Steak Seasoning then roasted in a 400F oven till the interior was 140...MMMMM came out great.

Today I deep fried my first turkey. When I took it out of the pot my first thought was OMG!! I thought I over cooked it. Well after I started carving it, everything just started falling apart. This was the best turkey ever.

I'm grateful my mother is at least 30 miles away. I did the dutiful daughter thing and brought her over for Thanksgiving. She drove everyone nuts with her bizarre delusional conversations. We all breathed a sigh of relief when she said she was ready to go home. Damn Kaiser and their stupid doctors for drugging her up.
