Take a half of a red pepper and dice.
Take half of a green pepper and dice.
Take half of a medium large sized onion and dice.
(optional: dice one seeded jalapeño pepper)

Put five flour tortillas in aluminum foil and bake at 350 degrees for 10 minutes.


Saute diced vegetables for five minutes in an ounce or two of canola oil.
Take a half pound of ground venison, or diced chicken, and add to the sauted vegetables and fry until the meat is no longer pink on the inside.
Add one half teaspoon salt, one teaspoon garlic powder, one tablespoon ground cumin, and one tablespoon good quality ground chili powder. Stir well and spoon into flour tortillas. Serves two people with side dishes of rice and beans.

'cept i would not use ground meat... i would use a nice flank or skirt steak (whatever was on sale) cut against the grain into 1" wide, thin-sliced strips. make a marinade with olive oil, garlic, cumin, fresh cilantro, some lime juice, sliced jalapenos, salt and pepper. i let the meat soak overnight before i cook it. cook the meat first in olive oil then add a few onions (yellow!) and bell peppers (i use green, not red) just before the meat is done. then serve with the traditional fixings. i get a can of hot pickled carrots/jalapenos served on the side as a garnish.

My mother is spanish

First get a slab of skirt steak. should be about a foot long unfolded, and a 1/4-1/2inch thick, get your fire going good, and put in a cup of wet mesquite chips in foil.


I won't tell you my mixes of spices.

but a good store bought replacement is in the mexican section of walmart..it's a white label with a little red/green on it, opaque round plastic bottle, says fajita seasoning, might have a woman on it, i'll look tonight when i'm shopping.

rub that on pretty good with a little water on both sides, let it sit in the fridge for 1 hour or until your coals get hot if you forgot.

Throw it on the grill.

once cooked to your liking, i like mine medium, put on a cutting board and cut into 1/2" strips along the grain.

If you like onions and peppers, you can grill them whole in foil and then slice them, or saute them in a pan.

use flour tortillas on the eye of an electric stove for 1 +/- minute per side, or use an iron skillet or griddle till done.


i might post up my recipe for salsa, and salsa verde next time.

i concur w/ the flank steak although it's getting harder and harder to find...it was first used for fajitas cause it was a cheap cut that nobody wanted but not so now

Her family is from both Pedras Negras, MX, and Eagle Pass, TX. There is a huuuuuge fajita cookoff every year near bracketsville. My family has been competing in the brisket and fajita portions for years.

home made tortillas and our spices have to do with her origins, a$$


most major supermarkets don't buy flank (not enough fat banding), or skirt, because they say it's 7 bucks a pound, but if you goto a mexican carniacia, you can get it for 2-3 bucks a pound

Well was easier than explaining the difference between the indian/mexicans that you see cutting grass, and the spanish decendants that lived in mexico.

Yeah, we'll probably go to a game. We try for one a year. I haven't even thought to try and pick one out yet.

I am not sure it helps you to be able to cook it (after all, most recipes are in English), however, it SURE helps in being able to order it!

Taco Bell Chicken Fajita Seasoning Ingredients
1 tablespoon corn starch 3/4 teaspoon crushed chicken bullion cube
2 teaspoons chili powder 1/2 teaspoon onion powder
1 teaspoon salt 1/4 teaspoon garlic powder
1 teaspoon paprika 1/4 teaspoon cayenne pepper
1 teaspoon sugar 1/4 teaspoon cumin

Instructions for Taco Bell Chicken Fajita Seasoning
measure all ingredients into a ziploc bag, seal. shake well to combine.

To Use:
Prepare the fajitas using the same directions found on the package of the original
seasoning mix :
BROWN ground beef or strips of chicken breats; Add chopped onions and green pepper and cook till softened.

Add seasoning mix and 3/4 cup of water. Bring to a boil;
reduce heat. Simmer uncovered, 10 minutes, stirring occasionally.

HEAT taco shells or tortillas as directed on package.

SERVE bowls of seasoned ground beef, lettuce, tomato,cheese sour cream and your favourite guacamole with tortillas or taco
