In 1964, during Bourbon-fancier Lyndon Johnson's administration, the U.S. Congress passed a resolution declaring Bourbon "…a distinct product of the United States." No whiskey can call itself Bourbon unless it meets the following criteria: Must be made in the United States Distilled at less than 160 proof from fermented grain mash The grain recipe must be at least 51% corn The product must be stored in new, charred, white oak barrels at no more than 125 proof Nothing can be added to the final product except pure water Most Bourbons are aged for at least four years. At Woodford Reserve we pay no attention to the calendar. Because we have very exacting standards with regards to color, aroma and taste, it is up to the palate of our master distiller, Chris Morris, to tell us when a barrel is ready. Every barrel matures at a different rate. Where is the Name From? The name "Bourbon" comes from Bourbon County, Kentucky, which, in the 1700's, covered a large portion of Kentucky and was a point of departure for whiskey moving down the Ohio River to the West and New Orleans. Very smooth, or at least I think so. I don't think there is an American whiskey that is made from grain roasted over a peat fire, so I don't think any of them will come off as "peaty". Rye bourbons are usually considered 'spicy', while wheated bourbons are considered 'smooth'. Makers Mark, W.L. Weller, Old Fitzgerald, Rebel Yell and Old Rip Van Winkle are wheated bourbons. IMO Old Rip Van Winkle is the best bourbon, rye or wheat. In my book, Highland Park and Lagavulin are tops in Single Malt Scotch...Balvenie is good too. Leaching the whiskey through sugar maple charcoal gives it a slight smokiness, though it tastes nothing like single malt. Skip JD Old No. 7 and go directly to JD Single Barrel or George Dickel No. 12. Also, if you like tequila...try a good mezcal. It used to be that the only place you could buy liquor or wine for home consumption was at the ABC (Alabama Beverage Control) store. Then, they relaxed the liquor laws, and we could buy wine and beer at the grocery store. Then they relaxed the laws some more, and people could open private liquor stores. But here's the catch: the liquor store owners have to buy all their booze from the state, and by law, they may not sell their liquor for less than the state sells theirs at the state store. I think it was just last year, or maybe the year before, that Sunday sales of alcohol were allowed here in Huntsville. When I was a kid, in "lounges" (what most people call a "bar") they could not serve a mixed drink already mixed. All alcohol was sold in miniatures, and taken to the patron's table, with the mixer, and the patron mixed it up themselves. That changed in the 70's sometime, I'm pretty sure. Like I mentioned before, liquor taxes are pretty high here. So high, that it's worth it to go to another state and make all your liquor purchases, unless you absolutely have to have something immediately. If the state would just lower the taxes some, I bet they would see increased revenue because it wouldn't be worth it to drive to Tennessee or Georgia anymore. Oh, but we couldn't do that, could we? You may not like peat much, thus the reason you don't like Chivas. My fave, the Macallan, doesn't have much peat, but they rarely carry it at bars. Hey Geo, is Glenfiddich peaty? I've never had it.” 8:37:45 AM 5/10/05 “There is a whiskey called Old Smugglers. It taste a lot like Chivas at about 1/2 the cost. It also does not have that alcohol or peat taste.
