Veggie Recipes for the Trail
With all talking of vegetarianism and all does anyone have any recipes to share? I thought it would be hard to find recipes that weren?t like ?Mango crusted lasagna? but I?ve been able find a lot of good ones.

For the trail:

Bean Corn Quesadillas

½ whole kernel corn (dehydrated)
2 tbs sliced green onion
¼ tsp ground cumin
16 oz. can refried beans (dehydrated)
8 tortillas
¾ cup Monterey Jack cheese (can be dehydrated with the beans but best if fresh)
Jalapeno peppers

You can mix the cumin, onions and beans together for drying to make it easier. Rehydrate the bean mix. Spread the beans on a tortilla, add some rehydrated corn on top of that, place a tortilla on top and throw in a hot skillet til browned on both sides. This recipe makes enough to STUFF two hikers.


TexMex Macaroni Surprise

1 ½ cups macaroni
1 can crushed tomatoes (dehydrated)
1 can baked beans in tomato sauce (dehydrated)
¼ BBQ sauce
2 tbs catsup
1 tbs taco seasoning
crushed red peppers to taste

Drain off the baked bean sauce and mix it with the BBQ sauce, taco seasoning, catsup and the tomatoes and then dehydrate this mixture. Dry the beans separately. After rehydrating the beans and sauce mix add it to the cooked macaroni. It sounds like it?d be nasty at first but this recipe is killer!

One for at home:

Mushroom and Leek Puffs

2 ½ cups chopped fresh mushrooms
1 bunch of leeks sliced into rounds (I just chop them up fine)
1 tbs flour
½ tbs salt
Ground black pepper
¾ cup milk
Olive oil for sautéing
1 box pastry puffs (cresant dough works too)

In a skillet sauté leeks until wilted. Add mushrooms and continue to cook for 5-7 minutes. Add flour and mix so all leeks and mushrooms are coated. Add milk and stir until thickened. Cut pastry dough into squares and fill with leeks and mushrooms. Bake at 400 degrees for 30 minutes. Don?t forget the salt and pepper or this will be a bit bland.

BBQ Onion sandwich

Sauté ½ a big Vidalia onion and add ½ cup BBQ sauce and heat. Eat on a couple kisser rolls. Not only does this taste great but ya get to share it with all your friends and loved ones in a few hours! LOL!

Cool info, as I try at least 1 different meal each time I hike.

Last week, in the kitchen, I made popcorn with my beercan burner and pot just to see if it would/could work on the trail. Because my pot grabber won't let the lid rest sealed, popcorn was popping out of the opening and all over the place. I remedied it by covering the pot top with Al foil and then grabbing the pot with the grabbers, leaving the lid off...and it worked!!! No burnt crap, and lots of popped corn. Mmmmmmmmmmm!

?Hey, you guys remember that one time when Budder made popcorn in camp??

LOL! Try and perfect camp lasagna before our next trip, kay?

I'm going to see if I can perfect a lightweight solution for taking salads and fresh veggies in hot weather.

falafel patties are a real easy meal.....i buy a dry falafel mix at my local organic food store and then mix that with water and throw in the pan til toastie.....I like em plain, but sometimes i bring cup of "sauce" i make with plain yogurt and nutritional yeast (the yellow, flaky, cheese tasting kind...NOT brewers yeast) to dip them in.....
yummy and filling and you can save extras for quick snacks.

As a luxury, I've brought the Jiffy Pop that comes in a pan like thing with the foil bag that you heat and shake. It's good, but it makes a lot of garbage to carry out.

TVP and I don't exactly get along very well. The onions are bad enough. I think adding TVP to the mix would make me just spontaneously explode in a cloud of methane. I could see my wife coming home now,

"Honey, where are you and what's that gawd-awful smell!?"

Here is a great recipe for veggie food...

185 lbs hyperpacker
(1) stick 4' long at least as thick as your wrist.
(1) large tree
(1) Nigal cooking some veggie grub

Hide the hyperpacker behind the large tree,making sure that the hyperpacker is holding the 4' stick LAPD style. When Nigal begins cooking his tasty vittles, have the hyperpacker quietly sneak up behind Nigal and whack him about the head and neck. After a few good swats Nigal should let go of his food. Quickly have hyperpacker pick it up and ENJOY! YUMBILICIOUS!!!!!!!!!!!!!!

Here's another veggie idea.

Go to a local super market that has a lunch salad bar (my local Giant Eagle has a killer one). Scoop portions of whatever you want into a take-out container. Take it home and divy the portions into their own individual zip-loc baggies. Use this as a first or second meal, cause things start to spoil, ya know!

I'll get some pita bread, salsa, and lots of stuff from the salad bar and make veggie wraps for the first nights meal. This beats buying all the stuff, cutting it all up, and eliminated all the leftovers when you're not going to be around to eat them.

Another "Mmmmmmmmmmmm"!

Om may mean hummus. Falafals come in a powdered mix, but are rolled into balls and fried in oil and they are put in a pita.

lol running girl......i would be rich if i had a dollar for everytime i heard that one!heh..
lh....i meant falafel.....i pat them down like patties and find i do not need much oil to cook them, .... i carry a tiny platic bottle of olive oil on long trips. i eat them like biscuits......i am not too crazy about carrying pita bread on the trail.....i rather carry the lighter, flatter easier to pack flour tortillas for bread....then you can have quesadillas!. Hummus is great too, .....

I often take a large Baking potato and a small onion,I dice them up and fry them in some olive oil and of course then I fry some Spam to go with it!

I'll be bringing some of that cobbler w/ us on our May trip. Seems you should be able to convert the recipe and make it veggies and dumplings easily.

Hey Spam, I don't think Spam qualifies as a veggie recipe. Although I really do wonder what that stuff is made of, no never mind. I don't really want to know. LOL!

Lipstick, hummas and falafels are two different dishes. They do both contain chick peas though.

Here's one for you...

Thai Noodles (1 serving)

Ingredients: 2 Tbs cashew butter, 1 Tbs. peanut butter, 1 green onion chopped, 1/2 Tbs soy sauce, a heathly squeeze of lime juice(lemon will do in a pinch), 1 Tsp sesame oil, 1/2 Tsp sugar, 1 small clove garlic crushed (or 1/2 tsp of powder), healthy pinch of red pepper flakes.
Soba noodles (Japanese buckwheat noodles)-what you consider a serving.
Optional toppings: whole peanuts and or cashews, snow peas (raw or lightly sauteed, tofu...

Mix all of the ingredient (except the noodles and toppings) and blend until smooth. It should look like a dark runny pancake batter. Add water if needed. Transfer to a ziplock. This mix lasts a couple of days in a pack.

When ready to eat, boil and drain the noodles then mix with sauce. Very yummy! This sauce also makes a great dip for veggies or bread.

Pam, yes I know hummas and falafels are too different foods silly. I've been eating the stuff for 20 yrs now since I was introduced to them. Gotta love those chic peas, sweet & nutty flavor.

my personal favorite is the easiest in the world to fix....nothing too fancy....boil pasta, then toss with olive oil, parmesan cheese, and red pepper flakes....a nice bonus would be some chanterelle mushrooms sauteed in olive oil....i'm salivating even as i write this....

How much MSG in Spike? A number of those all-in-one spice mixes go heavy on MSG (which isn't always called that on the ingredients list -- good lobbiests).

I think I may have made the absolute BEST thing I’ve ever made on the trail. I cooked a Lipton’s Spanish Rice but added about an extra cup of water and then added two packets of tomato Cup of Soup just as it was getting done cooking. Some bread and cheese on the side and it was enough to give me a culinary go-gasm!

So good I just wanna rub it in my hair!
