Anyone ever tried buffalo meat?

Anyone ever tried buffalo meat?
A local supermarket is going to start carrying buffalo meat raised on a local farm. I've never tried it but its supposed to have about 1/4 the fat of pork or beef and 1/3 that of chicken. Additionally, as buffalos are naturally hardy, they aren't fed steriods and antibiotics and are easier on grazing lands. It *is* more expensive.
Is it any good?

Buffalo (Bison) was on the menu at a restaurant I ate at once in Park City Utah. They were out of it the day I was there. Bison are big but don?t have as much meat on them as you might think. I guy I know that helped field dress one once told me they are all lungs. There is a farmer a few miles form me that as 4 or 5 bison. At one time some ranchers were raising a cross between cows and bison, ?beefalo?. I have only heard good things about the quality of the meat of bison.

It has a slightly gamey flavor but not so much that it's unpleasant.

Had it at a buffet once -
it was served right off the roast like they do with roast beef.
...dark, beefy, and a wee bit gamey - sorta like llama, LOL.

I've only had the ground version and it was kick ass. I'd like to try a nice medium rare steak though.

I have had burger form, and because of its low fat content, can be a bit dry. I really like the flavor, though.

Nice flavor. Somewhat reminescent of range beef, but a bit stronger flavor. Because of the lower fat content it cooks differently. Easy to overcook.

I've had roast, steaks, sausage, and jerky.

You could likely get the butcher (processor) to add a bit of beef fat to the ground buffalo. That helps make it less dry.

Somewhat related...

Over the years, farmers have bred a lot of different kinds of plants/animals.

As large farms have become the norm, many farmers have turned to the highest yielding breeds/plants - at the exclusion of the traditional breeds.

Is there anything like the endangered species act for farm-related animals? I imagine some long-used animal/plant types are being lost.

Biodiversity is not just in the rainforests.

you can purchase heirloom seeds still. they're really fun to grow. ya get crazy produce like moon and stars watermellon. it's the most lovely black color with a large yellow spot and tons of little yellow specks around it. we've never been successful in raising one to the point of ripeness though. maybe this summer.

i think that there are people who still raise old breeds of chickens and cattle mainly for show purposes too. go to the state fair and check out how many crazy chicken breeds there are, it's amazing!

Buffalo Meat, yeah, I has some jerky once that I smuggled in to a PETA meeting. It has the fat content of dove. I heard it tastes really good if the animal is scared and tortured before it is slaughtered.

I've had buffalo burgers a few times and they are delish. Buffalo jerky is good too.

Ostrich is also excellent. An ostrich burger is so much better than a turkey burger. Ostrich burgers are tasty and full of flavor. Turkey burgers taste like the ketchup and mustard you put on them.

There are organizations out there they try to maintain stocks of rare farm animals -- unusual chicken breeds, dwarf goats, what have you. Got a mailing once asking me to "adopt" one of these animals. (At first I thought they wanted to actually send the animal to me, then I realized it was more like "adopting" a child in a poor country, except I don't think the animal would write you letters.) Don't remember the name, but I'm sure a little internet searching would turn them up.

Buffalo meat is very popular in this area, they have steaks and burgers on most of the restaurant menus here. There is a farm next to where I work that raises them also. Mean critters. I haven't eaten it, but ones that have seem to love it. Ostrich was also served for a while, I did try that and it wasn't good. Stringy meat with little taste.

Most folks here still raise the old traditional varieties of veggies in their gardens. It's typical to see acre and over gardens. They sell the seeds in the farm co-ops and some save then year to year.

I guess we stick to the old traditional stuff a lot, but I don't consider that a bad thing.

Good stuff. I've made tacos, lasagna, chili, bbq burgers, enchiladas, and steak with hearty onion gravy with buffalo. I used to get it free from a Native American I worked with. He hated it. But he was an apple Indian. Red on the outside, white on the inside. He was a Burger King freak. Go figure. Try it...scrumptious!
