What's For Dinner?
I skipped my lunch, so I could try and balance the damn company checkbook. Finally found the $.60, but now I am about to starve to death. What's everyone havin' for dinner?

It is usually easier to find a big mistake, then a small one. I looked for that $.60 for quite awhile. I'm thinking Enchiladas or Broccoli & Mushroom Stuffed Pasta Shells w/ Marinara. I might also eat a whole bag of Pecan Sandies. I would also enjoy an A&W Dbl. Mozza Burger w/ a RootBeer Cooler. (So far I haven't had to worry about my weight, so I tend to be a glutton.)

Dunno. The wife and kids aren't home, so whatever it is it will be a solo experience.

Not a @%#@$ thing. I have an up-the-a$$ procedure tomorrow A.M. as part of my annual physical. Water only for 24 hrs, to be followed by a self-administered enema. So no bitchin from anyone!!

Wow, wanderer, sorry. ken, good luck w/ the potentials. I really love to cook. I am kinda' old fashioned where that area is concerned. I love to make big, good meals w/ big, yummy desserts. I wish I had someone beside boring me to cook for. The baby just eats processed fruits and veggies, so that isn't all that fun (it is sorta' cute).

Boiled dinner (corned beef,cabbage,onion,potato and carrot) with corn bread (actually johnny cake). Some chips for a snack later. I bought my first bag of chips in years today. They will be yummy!

Wanderer - ...been there, done that!

Tonight we had rib steaks on the grill, baked potatoes with sour cream and chives, sauteed mushrooms, and doctored up baked beans.

Speaking of beef. I know prices vary all over the country. Rib steak, for example, normally sells for $6-$8/lb here in So. Cal. But if you watch for sales you can get it for $3/lb. So I stock up. Is that the same everywhere? (I can get Porterhouse, New York and Top Sirloin as well on sale...just watch the ads).

we were big time losers tonight....25-4.....in less than an hour.....didnt even get thru the lineup on our team....yikes.......there was an awesome rainbow tho..
we went to a place called Napolitanos to eat afterwards.
so, it was LOTS of beer, i had an eggplant parmagiana sandwich on some crusty italian bread with a side salad and the rest had hot bird wings and pizza....
we had fun....when we are good , we are very good, but when we are bad, we eat drink and be merry.......

I had asparagus, radishes, and a spinach salad from the garden, some leftover rice, and strawberries from the garden for dessert. Yummy.

Its Friday - going backpacking with the boys. The young ones that is. We are eating Knorrs pasta and pesto sauce with dried mushrooms, fresh carrots and dehydrated mixed veggies. We have Spinach on the side with chocolate pudding for dessert.

Phil, I live in MT. I have lots of cattle ranchin' friends, so the beef is usually really reasonable and fresh off the cow. Toddnc, let me know when you're in for a big homecooked meal. When I was in HS, three bacholers that lived together paid me to cook them a good meal on Sundays. It was fun. LeSubtil, I made the Enchiladas. Yummy.

Friday night I was on the trail (see Pictured Rocks Thread) so I had Velveeta Shells and Cheese. I put the shells and the packet of cheese in a large zip-loc baggie. After boiling the noodles, i put them back in the zip-loc and squeeze the cheese into it. zip it shut and mush it till its all combined. eat w/ fork. my favorite backpacking dinner!

I like a good Porterhouse, but lately I have been getting Ribeyes.

If you like steak try this. Sprinkle sugar on both sides of the steak with salt and pepper. Let it sit in the fridge for an hour and right on a hot grill.

Friday night we had a Filet Mignon while watching Yosemite Falls through the window of the dining room of Yosemite Lodge in Yosemite Valley after a wonderful day hike to Sunrise Lakes from the Tenaya Lake trailhead on the Tioga Road near Tuolumne Meadows. Last night back at home behind the Redwood curtain we had Abalone steaks dredged in egg and flour with hot spicey peas and rice.

Something with pasta. The last few days were pulled pork sandwiches on the weekend, then beef soup, then chicken fingers w/dipping sauces last night w/baked garlic mashed potatoes. I buy those really tender chicken tenders to make them with.

Chicken and dumplings today. We had a rotisery chicken from Costco last night w/ mashed potatoes. I made stock from the bird's carcass and had tons of left over chicken and potatoes. I love mashed potato dumplings, they are true comfort food for me.

Do you have a recipe for the mashed potato dumplings? That sounds really good.

Tonight is beans and rice with lots of tomatoes, caramelized onions and locally made smoked sausage. Yummers. I also used the little red beans, not kidney beans. These have a smoother texture and different flavor that melds really well with everything else.
