Lunches-Suggestions
I'm looking for new suggestions for midday meals. I usually take salami, cheese, crackers, various nuts and a candy bar. I've tried dehydrated bean spread and found it gastly. Does anyone have any other suggestions?

I make some logan bread that works well for lunch. Basically whole wheat flour, lots of molasses, crasins, walnuts, etc. It stores forever and travels well.

Ghastly!!!"That's it kids! If you don't like dinner, I'll just start feeding you dehydrated bean spread!" That'll learn em. I just found a great German butcher that sells handmade jerky, among other fresh and processed meats. Focaccia with dried apricots and cheese is my favorite. I will add the newfound jerky.

Pita bread or tortilla with some smoked trout and sharp cheddar. Instant hommous and pita.

Instant hummus? Tried it. That goes in the gastly catagory too! :)

Oh, I forgot to add- My trips are 2 weeks long so Wine and Focaccia are a bit heavy and high volume. Suggestions should be lightweight also.
I've taken whole-wheat Pita bread but it gets moldy pretty fast.

The Richmoor pilot Biscuits hold up well, too. They survived a dozen days in my pack on Isle Royale.

Bill F, try making small bannock or pancakes at breakfast, that you can carry just until lunch. If you use soy powder added, you get some extra protein. I never imagined that you could carry cheese for two weeks without it getting yukky.

LyndyS-No, cheddar cheese works great! Just pack it in ziploks and make sure that you put it in the center of your pack in the cool morning hours. Pancakes, and biscuits-yes, I've done that but I eliminated the baking stuff in the last big weight reduction campaign. Just a quart pot for hot water, a spoon and a large SS Sierra club cup now.
Le Subtil -my friend takes Pilot biscuits. He says they're great to spit like buckshot to kill mosquitos-doesn't sound like they could be that delicious but I could be wrong. ;)

INDESTRUCTIBLE LOGAN BREAD
(Adapted from June Fleming. The Well-Fed Backpacker.)
Mix together
2/3 C softened margarine
3/4 C unsulfured blackstrap molasses
2/3 C honey
2 C water
1/4 C powdered skim milk
Sift in
2 lbs. (7 C) whole wheat flour
3/4 C brown sugar
1/2 t salt
1 t baking powder
1/2 t ground cinnamon
1/2 t ground nutmeg
Stir well.
Add 1/2 C chopped walnuts and
1 C chopped dried fruit. (craisins are wonderful)
Spread batter evenly on a greased cookie sheet (10" x 14") and bake at 300oF for 1 hour. Remove from oven, cut into 1" x 7" strips or 2" x 2" squares. Return to warm oven for about 2 hours to dry, propping oven door open slightly. (Turn oven temperature to 200oF for the 2 hours.) Yield 20 strips or 35 squares. Store in ziplock baggies in the freezer. Bread will keep for weeks on the trail, as long as it stays dry.

I like those little cans of deviled ham. I only take 1 or 2 because of weight. Then I smash the can to bring out. Look for the pop top ones.

Le Subtil, is the "t" for tablespoon or teaspoon? 7 cups of flour? Sounds pretty indestructible. Can you chew it or are you supposed to dunk it first, like biscotti?

This was the poop on my last AT hike. Italian Pasta Salad.

Very easy to make. I started at home by mixing some Itallian dressing using red wine vinegar and olive oil, enough for 2-3 ounces per day.

On the trail I would mix one package of ramen with 6 ounces of water about an hour before I wanted to eat - many times after breakfast before I started walking. By the time I was ready to eat the ramen was completely hydrated and all the water was gone. I then added 2 ounces of the Itallian dressing and about 2 tablespoons of parmesan cheese.

It tastes great, and other improvements I made while hiking was adding some dehydrated mixed vegetables to the pasta while hydrating for some more texture, and also pouring an ounce of dressing in a bowl and dipping whole weat tortillas in it to eat with the pasta.

Try making it at home - it's easy, light, and outstanding. It also has lots of calories for energy and the foods pack great.

I'm not one to worry too much about lunch. Usually eat a big breakfast then snack on bagels, trailmix, jerky, cheese, dried fruit, whatever for lunch. Oh, and Cliff Bars.

LyndyS - normal convention is, small t = teaspoon, large T = Tablespoon. Been awhile since you picked up a recipe book eh. LOL

Actual, Chi, I use recipe books alot, it just seemed like a teaspoon, or 1/2 t was too small for 7 cups of flour. I wasn't sure if Le Subtil was following convention, better to ask.

SGTRock, That Italian pasta salad sounds great! I'll have to try it.

I usually eat peanut butter on bagels or GORP. I've also had tuna in those new packages but I wish they came in smaller portions.

I've made LOGAN bread, also. It's not a delicacy but it sure beats cliff bars, in my opinion.

BTW, Le Subtil may not be conventional, but he's great! :o)

I got the 3.3 oz pkg, used 1/2 and sealed the rest w/duct tape, then put it in baggies. I'll try it again this weekend and see how it does in warmer weather.

Snow Nymph, I was at the grocery store last night and they now have tuna in a smaller version of the new packages. Didn't notice the exact size though but it looked about right for one person.

this is not necessarily for lunch, but is a great treat for the first night out....we freeze the little cups of applesauce and/or puddings....they take all day to thaw out and are usually still ice cold for your first night's dinner....

For stuff like crackers that tends to self destruct I use the rectangular light weight metal cans that gourmet instant coffee comes in with the plastic snap-on lids. I find someone to drink the coffee stuff and then get the empty cans to pack crackers and triscuits in.

Pringles cans work well for crackers, maybe a little big for a weekend trip. Maybe you could try those mini Pringles containers. They're the same size around, just a lot shorter.

Pita bread, tortillas, or bagels. Wrapped properly will keep for a couple weeks. Peanut butter, canned chicken or anything else you like. To break the monotony I'll someday's just munch a couple clif bars and some dried fruit.

Take a Chef-boy-ar-dee Cheese Pizza kit, (the kind that comes in a box).
Mix the dough and let it get ready. Then mix the sauce and the cheese in with dough. (Be sure and mix it up good). Then make it into small breadsticks and bake. Store them in zip-loc bags. Never had any to spoil because they go quick!
