Cajun Gumbo - Backpacked In

Cajun Gumbo - Backpacked In
Drag in a large stockpot, and empty about six cups of water into it. Open up the gumbo starter you bought at the salvage grocery, and find the ziplock bag with the canned meat and seafood. Pour the contents of the canned chicken into the pot, water and all. Pour both of the canned shrimp, but drain each container first. (I really didn't want shrimp juice in my gumbo.)

Take the cajun sausage out and slice it. (If you can stand it, tear the little round slices into random sized pieces, just like we pull a pork shoulder around here. It makes it much better.)

Bring it all to a boil, and then let it simmer while you go swim or something. About the time you are ready to eat it, dump in the okra you sliced up a little while ago.

You would be surprised how good this is, long after you have turned your stove off. Just put the cover back on the stockpot, and dip into it whenever you want another bowl.

Arclite? The LSU/Tenn game last year was horrible.. We played like absolutely crap.. I don't know who I was madder at.. Fulmer or Clausen.. but I will tell you this much..

LSU throws the BEST tailgate parties.. we ate like KINGS!!!.. I could have easily ditched the game and just partied with them all afternoon.

Towndawg I admire your gusto. I've been eating gumbo since I was less than knee high and have seen my folks cook it (I don't cook myself), and I can tell you, I would not want to haul in gumbo fixings on the trail much less the huge pot.

Honest? The canned chicken and shrimp weigh more than the stockpot.

I picked up a lightweight stainless steel one in Big Lots one day..

I bought it when I was down in South Carolina.. blue crabbing for dinner.

The only gumbo pots I'm familiar with are at least half as big as most people's backpacks.

this one is big.. 3 gallon.. but i swear it was not all that heavy.. just had to STRAP it.. and let it clank clank clank on the outside of my pack..
