How about for breakfast, as they do in Sichuan Province? Here's my wife's recipe for Spicy Sichuan Noodles that she learned to cook while we were in Chengdu. (BTW, it should be served at room temp, so it could be made the day before, allowed to age overnight in the fridge, and then carried in a Tupperware type container for a short overnight hike.) To serve 4: 1 lb. thin spaghetti noodles, cooked until tender but firm. After rinsing cooked noodles in cold water and thoroughly draining, add: 2 to 3 T. minced fresh garlic 2 T. minced fresh ginger 1 spring onion, chopped 2 T. soy sauce 1 t. Chinese vinegar (or light vinegar) 3 T. sugar 3 T. chile oil* *To make chile oil: heat slightly 1/2 cup canola oil. Do not get oil too hot or you will burn the pepper. Add 3 T. ground cayenne (red) pepper. Stir, pour into small bowl or jar and let steep. When spooning oil into noodles, stir to raise the amount of pepper you want from the bottom. Adjust "temperature" of batch by adding, a little bit at a time, of either more chile oil for heat (be careful) or more sugar to cool it (believe me it works) My wife made a batch of these when our dear friend from China visited and they both ate them for Saturday supper (they couldn't wait for them to age) and then Sunday breakfast. I still don't trust it completely. I can either eat it cold or hot. Depending on the weather etc. king arthur has the dried whole milk - also dried whole eggs, cheese, lots of good stuff. I also use their porriage and dried soy milk (its sweeter than regular milk - but don't cook the oatmeal with it - it sticks to the pots) Knorrs makes a hash brown that is really good, and easy to make. I also just saw that bisquick has made pre packaged biscuits - cheddar, cinn, plain. Just add water. They are good - tried them at home, they will go on my next trip. I get better results from the eggs by using slightly more water than they recommend. Don't ever use less. Must have my hot Tea also to get my insides warmed up.
