Recipe help....Snackboy?
Today Hyper and I went to the State Fair. We got to meet CowPatty (cool chick) and we got 14 baby quail! Right now they'd only make quail mcnuggets but in a few monthes....

Anyone have any experience raising game birds? Any favorite quail recipes? Anyone ever dehydrated quail? :0)

Save some of that dehydrated quail for our Isle Royale trip next year, Joy! Does it taste like chicken? lol

Before ya go and dehydrate them thar quail McNuggets...make sure ya gut and clean 'em. They get prety thirsty when ya dehydrate 'em alive.

Quails are cute. I don't think I could eat em.

It's different when they're in the wild and you shoot them, but after they've been your pets for 2 months??

Here's a quail recipe:

Pick the quail rather than skin it for better flavor. Save the hearts and livers for stuffing.

1 c Lawry's seasoned marinade
6- 8 whole quail
hearts and livers from quail, finely chopped
2 T butter
2 eggs beaten
1 t Lawry's seasoned salt
1 t Lawry's lemon pepper
1 c bread crumbs
4 strips bacon, cut in 1/2

combine marinade and quail, marinate 30 min. in fridge. Discard marinade. Combine hearts & livers, butter, eggs, Seasoned salt and lemon pepper; mix well. Add bread crumbs to form a soft dressing. Stuff quail cavities with dressing. In large baking dish, pack quail breast side up. Drape 1/2 slice bacon over each bird. Bake in 450 F oven for 5 min. then lower to 350 F and bake 30 min. til no longer pink in center and juices run clear when cut.

Let me know how it turns out. I just shoot em and leave em dead.

Quail is wonderful! My Grandma used to make quail breasts, bisquits and gravy for breakfast whenever we visited. mmmmmmm......

Tastes like qualilty range feed fowl when wild. Never had farm raised I don't think.

Biz, our daughter is 7 wks old.Thanks for the recipe, it sounds good. And yes, quail are small but so are shrimp,scallops,crawdads and oysters. Oh yeah regarding them being pets...I had a pet goat as a child. His name was Dinner. He tasted good, as did my rabbit,duck,goose and chicken. I am just glad we arent asian cause I dont think I coulda eaten my cat or dog.

Biz you seriously kill em and leave em?

I find that quail is pretty much a pain in the buns; lots of work picking at them for not much meat.

My recipe for quail is the same as for wild duck:

If you wish to stuff them, cook some rice, or rice/wild rice in chicken stock and orange juice ½-½ instead of water. Add sliced almonds and dried apricots (chopped), sage, s&p and chives.

I put at least two quail per person on a rack and 1 or 2 tins of chicken stock in the roasting pan and cook at 325°F for about an hour (same time as for chicken of the same weight). I then prepare veg., usually just a salad and the glaze:
Seville orange marmalade, lemon juice, soy sauce and ginger.


When the quail are almost done, I remove the pan, raise the temp. to 375°F, brush the quail with the glaze and put them back in the oven on another pan - don't wait for the oven temp. light to go off - they glaze better this way.

I take the roasting pan, add water if necessary (there will be almost no fat in the pan), put it on a burner on high and add the glaze with a little more marmalade to thicken this sauce. Remove the quail before they burn, cover with sauce and serve with the salad. If you want to be a little more elegant, split the quail and place them on the plate glaze side up with the rice underneath.

I have wild plum (prunus nigra) trees in my yard that give fruit once every three years (this year). I make plum jam - in fact, that's what I'll be doing this weekend. When I have plum jam, I use that instead of marmalade; don't be afraid to experiment.

hyperpacker, i had a pet goat too! except he really was a pet. until we moved, and we couldn't take him with us...so we gave him to our next door neighbors. then my mom ran into them, and asked how the goat was, and they said he tasted good!! i was traumatized...

I vote for gremlin's recipe since I like the addition of fruit! Sour cherries are good with birds (with pork, too) and Michigan has a lot of 'em. It was a pleasure to meet Joy, Hyper, & Abby......a day at the State Fair..... quail mcnuggets - he he!

Boogers On A Stick

8 ounce jar Cheez Whiz
Green food coloring
25 To 30 pretzel sticks

Waxed paper
Long handled spoon
Platter

Melt the cheeze whiz in the microwave or on top of the stove, according to directions on the jar.

Allow the cheese to cool slightly in the jar.

Using a long handled spoon, carefully stir about three drops of green food coloring into the warm cheese, using just enough to turn the cheese a delicate snot green.

To form boogers: Dip and twist the tip of each prtezel stick into the cheese, lift out, wait twenty seconds, then dip again. When cheese lumps reach an appealingly boogerish size, set pretzels, booger down, onto a sheet of waxed paper.

Allow finished boogers on a stick to cool at room temperature for ten minutes or until cheese is firm.

Gently pull boogers off waxed paper and arrange on a serving platter. Serves 5 to 6 booger buddies.

Serving Suggestion: Place a bowl of chunky red salsa in the center of the platter so that guests can turn plain boogers into yumblilicious bloody ones.

SAVE THE BABY QUAIL!!!!!!!!
I was about 12 yrs old,and had a pet rabbit that used to follow me around. We moved, and my father said he gave my pet to the man next door who had a sister with a farm.

The man next door was an old Italian man. It took me a while, but I put 2 & 2 together. I'm still freakin out over it. It just wasn't right!
